Hashbrown Breakfast Bake

Made it this morning for Easter brunch. Everyone loved it. I used turkey sausage instead of ham and reduced the milk to 3/4 c. Also added chopped green onion. Recipe came out firm. I would not use so much oregano next time either. Personal taste. All and all would make again.

Balsamic Baked Tilapia

Very good. Tilapia can be a pretty blah fish, but the balsamic added a great flavor. I didn't have blue cheese so I substituted goat cheese which tasted great and added some yellow pepper since I had it on hand and it added a nice color. Served with jasmine rice.

Broccoli Shrimp Pasta Toss

This was fast but seemed as though it would be bland as there wasn't any seasoning other than salt. I added pepper and red pepper flakes, wine, and marinated artichoke hearts. The artichokes gave more moisture to the mixture as well as the wine, otherwise too dry. Also used whole wheat penne.

Devouring Oatmeal Chocolate Chip Cookies

Yum yum, is all I can say. I used whole wheat flour and added chopped walnuts. It was chewy on the inside with a crunchy outside. A new staple cookie in my house also. Had to bake for 15 min and did use the parchment paper.

Baked Salmon II

Made this as is except I didn't have parsley. Didn't miss it. It was delicious. I was apprehensive about so much olive oil since this fish has a lot of oil of its own, so I reduced it by 1 less TBS. probably could of reduced it a little more. This will be my salmon recipe for winter when we can't grill outside. Thanks for sharing.

Pork Tenderloin Diane

This was very tasty,tender, and so fast as compared to grilling or roasting a whole pork tenderloin. The only thing I changed was doubling the sauce and throwing the meat back in for a couple minutes. My husband went back for seconds.

Big Soft Ginger Cookies

Made these because I love the big soft ginger cookies at the Whole Foods Store. Big disappointment after reading all the great reviews. Followed the recipe as is except used wheat flour and the cookies were so soft they fell apart( not in a good way). They were overly sugary.
