Banana Apple Muffins

Taste was pretty good for these muffins, but the texture was a bit lacking. I think I would add more flour and oil to them. I used paper muffin cups and the the muffins did not peel out of them.

Banana Chocolate Chip Muffins

These are great snack muffins! Following others suggestions, I cooked them at 350 and it took about 18 min. The recipe made 15 muffins. I was out of oil, so substituted unsweetened applesauce and then added a few splashes of milk (3-4 Tbs I think) to get the right consistency. They came out very fluffy and even won the approval of the 4 yr old I take care of!

Alienated Blueberry Muffins

These blueberry muffins were excellent for being lowfat. Mine only needed to bake for only 20 min. I made no changes to the ingredients. They may seem a little bland compared to the high fat recipes, but I found them to be delicious and they made a nice crisp exterior (I didn't use muffin cups) that gave a good texture. Also- they were very light and fluffy.

Mocha Mudslide Brownies

These are excellent cake-like brownies. Great flavor and easy to make. These are ingredients that I usually have on hand. I also added 1/2 C. of chocolate chips. I will definitely be making these again!....I just made these for a second time, but decided to try to make them moister. They came out even better! Not quite chewy, but definitely very moist. Here are the changes: use less than half of the butter to melt with the chocolate. Use the remaining butter, softened, to cream w/ the sugar. Add eggs and then chocolate mixture with liquor. Then add the remaining ingredients...I decreased the flour to 1 1/2 Cups.

Cereal Yogurt Bars

These are great bars! I subsituted applesauce for the butter to get rid of the majority of the fat. I still mixed it with a pastry cutter to chop up the cereal. This made the mixture a lot more moist, so it was a little difficult to spread a thin layer in the pan. I wasn't sure that it would work for this recipe, but they came out fine! They were just a little bit chewier than I think they would have otherwise been. Also, since I didn't have much topping to put on, I made a quick streusel topping from about 3 Tbs brown sugar, 1tsp flour and 1 Tbs butter. I also used Post Blueberry Morning cereal with blueberry yogurt. This is a very versatile recipe!

Beverly's Get Up & Go Breakfast Cookies

These are excellent little on the go breakfast cookies. I substituted applesauce for the butter and they came out perfectly. I would definitely recommend doing this to get rid of the majority of the fat. I think they'd probably be good with some white chocolate drizzled over the top, but they're still coming out of the oven, so I have not tried that yet. Thanks for the great recipe!
