Russian Tea Cakes I

This recipe was very easy and the taste was exceptional. I used pecans because that was all I had on hand. My mom, friends, and boyfriend flipped over these cookies so I guess it was a good substitution :) Like most of the reviewers, I ground the nuts instead of chopping them and it helped with the texture. I added a little bit of cinnamon to the powdered sugar on the second coating for just an extra hint of yummy.

Surprise Apple Salad

Let's just say I doubled the recipe so my boyfriend would have leftovers. But I found him eating what was left at 3am. He was standing by the fridge wolfing it down. This salad is that good! Lol

Country Pound Cake

Excellent taste! I made one small change: 1-1/2 tsp vanilla and 1/2 tsp rum extract and it gave great flavor. I baked in 2 loaf pans and they are gorgeous cakes. Served with a brown sugar caramel sauce. Wow!

Sherry Sour Cream Chicken

Boyfriend went crazy for this! I doctored up the original recipe using 1/2 c diced celery, 2/3 c diced onion, 2 cloves minced garlic, and a small package of fresh sliced mushrooms. I sauteed these with the butter before browning the chicken. It added lots of flavor. I didn't have fresh herbs so I used dry bottled herbs and cut the amount in half. This dish was the best thing I've made in a long long time.

Chicken Crunch

Good gracious - how can simple be so tasty?! I used cream of chicken soup with herbs and added onion when cooking the diced chicken. It was scrumptious! I know some reviewers didn't agree but it was good leftover too. I can imagine a lot of variations that would make this different every time.

Baked Lemon Chicken with Mushroom Sauce

I gave the basic recipe 3 stars because I had to follow other reviewers ideas for doctoring this up. Added garlic, salt and pepper, and Italian seasoning to the chicken before cooking. I also had to add quite a bit of flavor to the sauce. Doubling the sauce was also needed. Good basic idea but as is it would have been very bland and skimpy on the sauce.

Simple Salisbury Steak

Full of flavor and I didn't make any revisions. The leftovers were excellent too. My boyfriend asked when I would make it again. That means it's a winner dinner :) *made this again and had no mushrooms and it was actually better. Added onion to the sauce instead. Fabulous!

Sour Cream Cucumber Salad

Easy and pretty good. Just kind of watery no matter how much I drain the cucumbers after salting them. I've made it twice and the cucumbers continue to weep. Definitely not good if leftover.

Sloppy Joe Sandwiches

Favorite! I added an onion to the meat and doubled the recipe. Also added 4 dashes of Tabasco to the sauce mix. It was so fast to make and so good. All the flavors and slightly sweet tanginess were a huge hit in my house.

Easy Chicken Enchiladas

Easy! I added a can if red enchilada sauce over the top while baking but otbwise followed the recipe exactly. I went for the real easy way and used chicken out of the pouches - the pre-cooked, pre-measured white meat chunks. My boyfriend eats a lot and could barely manage to eat 3 of these. I did have way more filling than expected. I added more than 1/2 cup to each tortilla so I cooked them an extra 10 minutes to get them hot all the way through. This recipe is a keeper and I can already think of several easy variations to make to keep it fun.

Swiss Chicken Casserole II

This was a big big hit!!! I made this exactly per the recipe and my boyfriend could not stop eating it, he gave it a 10 out of 10. It was so easy too. Awesomeness! next time I'm adding a little more cheese. He will be beside himself with glee.

Easy Chicken Divan

Very yummy! I took the advice of others and used fresh broccoli. I also used fresh baby carrots and some fresh cauliflower. Next time I'm going to use sour cream instead of mayo. This was a big hit at my house! Leftovers were gone the next day :)

Shepherd's Pie

I liked it but it needed more flavor in some way. I should have used tips from other reviews. I substituted corn for the peas. I did add garlic and paprika to the recipe but it was still a little bland. I also added cheddar cheese to the top for extra flavor. My boyfriend loved it and ate a huge plate of it and went back for seconds so maybe it wasn't so bad :)

Chicken Fettuccini Alfredo

I made this for Mothers Day since chicken Alfredo is my Mom's favorite dish. It was easy and came out perfect. I followed the recipe exactly - no add or substitutions. My boyfriend and mother were very pleased. Lots of leftovers too which we like!
