About this Cook
I'm a traditional Catholic who loves to drink wine while cooking for my family and friends and serving it up on colorful Fiestaware. When I'm not cooking, I'm creating mosaic art or volunteering as a cashier in a busy charity thrift store. Happily married 31+ years, we have three beautiful daughters and two dogs, a 150 gallon fish tank and a cockatiel. And I have a special and deep devotion to the Sacred Heart of Jesus and the Immaculate Heart of Mary which have blessed our lives abundantly. Sacred Heart of Jesus have mercy on us. Chicken In Basil Cream
We LOVE basil so this was wonderful! I made just the sauce for leftover chicken. Cubed the leftover chicken into it and served over rice. It was a hit with the fam so I know I'll be making this often. Thanks Emily for sharing it!

Portabella Nirvana
I used five giant portabella mushroom caps. I followed the recipe for the most part and gave four stars but only because instead of Italian dressing which we're not crazy about, I used lemon juice, olive oil & butter for the marinade. No crackers either, I made bread crumbs by throwing stale rolls in the food processor with a teaspoon of Old Bay seasoning. Will do it the same way again because this turned out FANTASTIC!! Thank you for posting this LJALEXSTADT as it made a great side dish and saved us from a boring dinner tonight!

Kale with Kiwi
This recipe looked so interesting I just had to try it. I doubled the ingredients (for four servings) and made it as written except for using curly kale and substituted 1 tbsp dried oregano for the fresh. Sorry, but nobody in my family including myself cared for it. The oregano was especially overpowering, and the kiwi tasted like very sour lemon. If I ever make this again I think I'd cut the oregano way down and use only half (or less) of the kiwi called for.
