Strawberry Pretzel Salad

Also good with Raspberry gelatin and use frozen raspberries....not in juice, just frozen. I also use 1/2 cup of powdered sugar rather than 1 cup of sugar....it's plenty sweet. The cream cheese layer does need to be chilled for about 45-60 minutes and I chill the gelatin for about 40 minutes then add the frozen berries....pour that onto the cheese layer. It is a great potluck recipe.

Annie's Fruit Salsa and Cinnamon Chips

This was delicious. I did cut the sugars and I felt my salsa was a bit tart, although those eating it did not agree. I dipped my apples in lime juice to avoid browning and found a slightly different recipe for the chips. Brush them lightly with water, place on foil lined cookie sheet sprayed with cooking spray, sprinkle generously with cinnamon sugar and bake 4-5 min at 500 degrees. These chips turned out better for me. Kids and husband enjoyed the left overs. This was great, thanks for sharing.

Apple Snack Squares

These are delicious and easy to make. I cut the sugar to 1 1/2 cups as we like to taste more apple than sugar, I used 4 cups of apples and an extra teaspoon of vanilla. Kids and adults alike loved this recipe. I am thinking of trying Hershey's Cinnamon Chips on top next time! Made it twice in as many days!

Great Nana's Secret Ingredient Date Nut Bread

This was delicious! I also halved the recipe the first time and I ground the walnuts rather than chopped them. The bread was moist and had the coffee flavor in the background. A keeper!

Russian Mushroom and Potato Soup

This was quite easy and quick. I prefer a thicker soup as well, so I just mashed the potaotes with a masher right in the pot before adding the mushrooms. No need to dirty the blender. I used baby portabello caps and a wild mushroom mix. It needed a bit more seasoning as well. I used half skim milk and half cup of the half and half to spare a few calories...plus I did a butter/olive oil mix for sauteeing. A nice hearty fall soup.

Sam's Famous Carrot Cake

This was very good...I did follow another users advice and added more carrot, used oil and applesauce....I too omitted the coconut but did use the raisins. With the cream cheese frosting it was delicious. I baked it in an 8x12 pan and flipped it out to frost it. Mine was done well before 60 minutes though. I would recommend checking it at 30-35 minutes. Thanks for sharing this!

Cranberry Pork Roast

I agree with the reviewer who wished for no stars. The roast was moist but there was no flavor and the flavor of the remaining juice was bland. I even added an envelope of Lipton Onion soup mix thinking that would spice it up. I tossed the juice and then added homemade BBQ sauce for pork sandwiches.

Judy's Strawberry Pretzel Salad

This is a great recipe but one I use is slightly different. For the cream layer use only ONE 8oz cream cheese, 1/2 cup of powdered sugar and the one small carton of cool whip. This is also delicious with Raspberry gelatin. Use frozen raspberries (not in juice) and add to the gelatin when it has jelled about 40 minutes. The key is definitely to not bake the crust more than 10 minutes or it does become like cemeent.

Baked Asparagus with Balsamic Butter Sauce

What a great way to prepare asparagus. I was tired of steaming it...or often over steaming it. I did use reduced sodium soy sauce (always do) and used two bunches of asparagus. Very tasty. Thanks.

Marinated Flank Steak

This was delicious. I did 5 minutes per side in a grill pan and when I cut it, the meat was a bit too rare in parts. I threw it cut back into the pan just to lose the red. Sauteed some onions and peppers and served fajitas! Thanks for sharing this recipe.
