These are wonderful! I do add sautéed finely chopped onion and more garlic...and bake them in the over on a cooling rack and cookie sheet to drain the excess fat. This is my go-to recipe!

My Best Clam Chowder

Reviewed: Jan. 16, 2011
This was very good, although I did make a few changes. Started out by cooking 4 slices chopped bacon ands then used the fat to sauté the celery and onion. Left out the carrots, and used at lease 2x the amount of clams. I did use some whole ( canned) clams which were little "chewy" but not too bad, and gave a little more texture . I also seasoned with a bay leaf and some thyme. At the end, garnished with the cooked crispy bacon. Def. Will make again!

Chicken Piccata II

Reviewed: Oct. 6, 2009
this was very good! I did make some small changes---added more seasoning to the flour, pounded the chicken, browned the chicken in olive oil instead of butter for 2o mins, added a couple cloves chopped garlic and then worked on the sauce. I deglazed the pan with a a splash of dry white wine, added chicken broth, lemon juice and let it reduce a few minutes and then added the chicken breasts back to the pan to thicken the sauce up. Finished with some fresh herbs and lemon slices for color and flavor. I served with egg noodles and some steamed green beans. My picky kids ate it all up and so did my husband. very fast and tasty!

Pumpkin Cookies V

Reviewed: Oct. 2, 2009
These were just "so-so" for me...taste is ok, very similar to pumpkin pie (I added some traditional spices). This makes a lot! I would say at least 4 dozen. Takes much longer baking time too---I would say 15-16 minutes per sheet, at least! Probably will not be one of my regular recipes...

S'Mores Bars

Reviewed: Oct. 2, 2009
This recipe is a disaster!I followed the directions precisely---including putting it in a well greased pan---Now that it has cooled, it is *bonded* to the pan! Unbelievable! So now I have to make something else for the bake sale, and I am out a pan, because that stuff is never coming out! edited to add---I was able to salvage 12 squares out of this recipe and wash the pan with a huge amount of effort! They really stuck to the bottom! They were sweet but tasty. I wouldn't make they again though, way too much work to cut the bars!

Best Toffee Ever - Super Easy

Reviewed: Oct. 25, 2008
This came out really great, very quick and easy too! I added a tsp of vanilla extract to the sugar mixture just before taking it off the stove. I also greased the pan and the parchment paper to prevent sticking, and I used my enamel over cast iron pot to cook this in. my husband loved this. Tastes like a heath bar!

Country White Bread

Reviewed: Aug. 7, 2008
this bread is fabulous! so easy to make and the flavor is perfect. nice soft texture... great sandwich bread. I substitute honey (a little less that 1/2cup) for the sugar, I like the flavor better. This is a recipe that never fails!

Exquisite Pizza Sauce

Reviewed: Jul. 23, 2008
I liked this quite a bit and it was so easy! I did make it in the morning and used it that evening, so the flavors had time to combine well. When I had first made it I didn't care for it, but by the time I used it on my pizza it was great! I didn't add quite as much honey but I do think that it is an important element in cutting the acidity of the tomato paste, and heat. I often use anchovy fillets/paste in my pasta sauce---they don't taste "fishy" they just add a layer of flavor. To all those reluctant, I encourage you to try! I made mini pizzas with my kids with this sauce and they (ages 2 and 4) ate it all up :) when I make it again I may add some chopped tomatoes into the sauce, just because I miss that "chunky" element---other than that, thought it was very good!

Cajun Red Snapper

Reviewed: Jul. 10, 2008
good, but next time I would go easy on the amount I put on the fish---it overwhelmed the fish flavor. I think some of the herbs could be decreased too. Will definitely try it again!

Grandma VanDoren's White Bread

Reviewed: Jul. 6, 2008
I think this is a wonderful recipe! I have only made free form rustic style crusty breads before, this was my first loaf white bread and I am so pleased with the results. I has a little worried when I was making it looking at the sugar amount, but the bread did not turn out overly sweet to my taste at all. also I was worried because the dough seemed very soft, but again, it really came out great. nice texture, crust chewy. I did used my kitchen aid with the dough hook for kneading and it came together fast. Nice rise too. I just took them out of the oven and it was delicious warm with butter. My (picky) 4 year old has already had 2 slices ,asking for it over the cookies I also made today---so that's an endorsement!

Special Buttercream Frosting

Reviewed: Apr. 21, 2008
This was very delicious! I did want a little buttery taste, so I did alter the recipe by using 1 stick of butter (1/2 cup) and 1.5 cups shortening I made cupcakes for my daughters playgroup with this frosting, and they came out beautiful. It tints very easily, and also pipes well. comes together very fast---I used my stand mixer. It does yield a huge amount of frosting. More than I needed for 24 cupcakes. Definitely will make again---so much better than store bought frosting and so easy!

The Best Rolled Sugar Cookies

Reviewed: Mar. 19, 2008
This recipe makes the most wonderful buttery yummy sugar cookies---and they are not overly sweet, just perfect! At Christmas, I was pressed for time in making cookies, so I bought the premade refrigerated dough at the store. It was absolutely horrible tasting and also very difficult to roll out. So I made it my mission to find a great homemade recipe and this is it! I'll never buy store bought again! This made enough for me to freeze half of the dough, and it freezes great. Rolls and cuts very nicely as well!

Tuna Noodle Casserole II

Reviewed: Jan. 25, 2008
Sorry but I have to say I really didn't like this at all. To be fair, I have only had tuna casserole 1 other time, and I didn't particularly like it! I thought I would try making this for my husband since he likes tuna casserole. Anyway, this recipe is incredibly bland to my taste (and I used sharp cheddar cheese and extra garlic!). It may just be me, I happen to prefer very savory, spicy food which this is definitely not! Everyone likes different things, and I will say it was very simple and quick, but I would not make this again sdited to add: My husband tried it and actually thought it was tasty, so go figure! I might end up making it again after all!

Chicken Marsala

Reviewed: Jan. 12, 2008
yummy! I added some fresh lemon juice and zest to add a little acid into the sauce. I also have to say I added about 4 chopped garlic cloves, dried pepper flakes and sherry (not cooking sherry). I think I ended up taking the chicken out and reducing the sauce a bit more too. But this is really delicious!

Mediterranean Lemon Chicken

Reviewed: Jun. 28, 2007
I thought this was wonderful! I used thin boneless/skinless chicken breasts and adjusted the cooking time accordingly. I also used "Italian Seasoning", instead of dried oregano since that is what we had. My it was super quick to make and my husband and 18 month old loved it! I like bold flavors so I probably used more garlic too. I definitely will be making this again.
