Amusement Park Cornbread

I tried this this weekend, it makes a very good, slightly sweet cornbread. I found these best prepared as large muffins, as the loaf I made is very crumbly and hard to serve. The muffins however, were excellent!

Blueberry Crumble

So easy, you can do this with any combination of cake mix and fruit pie filling. Chocolate cake with cherry pie filling (no nuts) has become a cherished favorite in my circle of friends - and they can't believe how easy it is!

Salsa Chicken Burrito Filling

My roommate and I liked this very much. I made it and added half a cup of water after I pulled apart the ckicken breasts, then served in in 6 (not 4) tortillas with cheese, sour cream, and green onions in the tortillas, and hot salsa, cheddar cheese and green onions on top. Delicious, and will kick a cold out of anyone!

Beth's Spicy Oatmeal Raisin Cookies

Awesome! I used Crisco shortening because I didn't have butter flavored, and it didn't seem to matter. Also tossed in 1/4 tsp nutmeg, 1/4 tsp ginger and an extra 1/2 cup of raisins. Delicious!

Cream of Spinach Soup

I have a collection of over 30 recipies that I make regularly from allrecipies and this is the one I make most often. Not only is it very good, it stores well and can be used as a soup or as a pasta sauce. I use fresh spinach and toss in sauted onion, mushrooms and fresh green onion. Basil, garlic and onion powder as seasoning. The is the only way I'll eat spinach, and even my fussy (and total carnivore) boyfriend went back for seconds!

Curried Coconut Chicken

I used the recipe as a launch pad for recreating a restaurant favorite of mine. Added 1 tbsp of minced fresh ginger to the onion/garlic saute, and tossed in a canned of pinapple chunks (drained) and a finely diced red pepper. Was very good, although mild, I may double the curry next time but I like spicey. :)

Tuna Broccoli Roll Up Casserole

I found this recipe looking for a way to use up some french fried onions lurking in the back of my pantry (not sure how I came by them and I loathe green beans). I must admit I had some misgivings about the combination of flavours in the recipe but it turned out quiet pleasent. Nothing I'd serve to company, but a quick and cheap weeknight meal - I think kids would like it too.

Cavatappi with Spinach, Garbanzo Beans, and Feta

Pretty good, but a little salty. I used whole wheat and vegetable pasta. Next time I plan to use about half again as much spinach, and only half the chick peas, which I found were very salty. Other than that, very yummy and refreshing!

This was very good. My only complaint was that it was a little oily, so next time I may cut back a bit on the butter. Otherwise, perfect!

Bran Flax Muffins

Very tasty, even though the look a little gross. Be careful though...when these go bad they don't mold...they ferment! Alcoholic muffin!
