Simple recipe, but didn't care for the taste which was very disappointing since I made a whole pitcher! Don't know if it was the coconut rum, but something gave it a funky taste ~ and everything was just purchased to make these. I will continue my quest for a good one!

Rachel's Tomato Basil Soup

I'm not a fan of tomato soup to begin with and didn't care for this at all. My review is based on my husband & three kids who love tomato soup. They all thought this was wonderful! I paired it with the Pesto Grilled Cheese Sandwich from this site and had a home run! They're already asking when I'll make it again as they're filling their bowls with seconds!

Andrea's Pasta Fagioli

This soup is wonderful! My whole family loved the taste (including 3 kids!). I've made it twice and planning #3 this week! I know it's summer, but I pair it with a crispy green lettuce salad and a veggie sandwich on crusty bread...yum, yum!

Guacamole

I have made this several times exactly as written and my whole family loves it! Actually, I have to double the recipe...and it makes alot! This is good with the obvious tortilla chips, but also on Vegan Tacos! Yummy! I typically use iodized sea salt, but I did use Pink Himalayan Sea Salt once (I had a couple little samples) and I must say it was out of this world! Instead of juicing a lime, I use 1T of Real Lime Juice to save some time. A "pinch" of cayenne is 1/4 tsp, but you can always add more to your taste ~ I recommend starting with this amount. This is a must try recipe!

Hummus III

This was my first attempt at Hummus and it was wonderful! My whole family loved it! I served it with pita chips and celery as an appetizer. I don't have a food processor and resorted to using my blender - I don't recommend this method. I'll be investing in a processor soon, because I had to do this in small batches in the blender and it took much longer than it should have. But with that said, it was definately worth the time & effort and this recipe I will make again and again!

Orzo and Tomato Salad with Feta Cheese

Wonderful! Couldn't find fresh dill so I used dried - 1 heaping tablespoon was just right. For the Vegan's in my house, the Feta was omitted and it was still a very tasty main dish for them. We love garlic so I doubled the garlic to 4 cloves. Made a second batch to have the next day and also added a can of drained artichoke hearts, chopped. Goes well with the other flavors and I recommend this addition. We also like kalamata olives so that's what I used in both salads - we always have them on hand. The flavors are good if you eat this the same day, but out of this world the next day! Thanks for the easy and delicious recipe!

Amish Breakfast Casserole

Didn't have bacon so I substituted 1# of sausage cooked with the onion. I used a full doz eggs and a 32 oz pkg of shredded hash browns. I increased the cottage cheese to two cups, but used the original measurements for the other cheeses. Delish & filling!

Vegetarian Chili

I've made this with & without the crumbles and both times it came out great! My family loved it! Served with the Vegan Cornbread Muffins (a double batch cuz they're soooo yummy!) and no one missed the cinnamon rolls!

Vegan Agave Cornbread Muffins

These are WONDERFUL!!! When my vegan daughter tried them the first she exclaimed, "They taste like I shouldn't be able to have them!" Enough said. Looking forward to experimenting with this great recipe as other reviewers have ie. pumpkin in place of the applesauce. Sounds yummy!

Pesto Chicken Penne Casserole

This makes ALOT ~ we're a family of five and have had it as a main dish for supper twice and still have some left over! Don't know how anyone could get this into a 9x13 pan. I used an 11x14 and an additional casserole dish. It's more flavorful the second day ~ I served with leafy green salads. Also added more spinach than it called for as other reviewers suggested and glad I did ~ there's ALOT of pasta. May even be good with brocolli instead? The only thing I will do differently next time is to add some additional alfredo sauce and probably some sauted onion & garlic. Just wasn't as creamy as I anticipated.

Kalua Pig in a Slow Cooker

Wonderful and super easy! Used the pig to make "Kalua Pig Burritos" like we had on North Shore and they was very tasty! Found the salt online @ The Spice Lab; it's called Hawaiian Red Alaea No. 12. I purchased the fine grain, but you do have the option to choose coarse. My pig was done after 9 hours on low - and yes I used the 6# - my crock is pretty new and definately gets hotter (even on low) than my old one. I was able to shred the pork right in the crock and let it soak up all the delicious juices for an additonal 2 hours. Just like butta! To assemble the burritos, place some pig on your large warmed tortilla, add some cooked white rice, carmelized onions, a little cheese and a drizzle of warmed bbq sauce. Roll up burrito style and enjoy!

Garlic Mashed Potatoes Secret Recipe

omg! These are the best ever! Scaled the recipe down to 10 servings using a 5# bag of red potatoes. Roasted 1 1/2 bulbs of garlic following another reviewers directions - worked awesome! What a delicious recipe! My husband couldn't stop eating them and I think they're even yummy cold!

Chicken Pasta II

Very tasty recipe! I only strayed from the recipe to add a small Vidalia chopped, used a 32 oz can of chopped tomatoes (cuz I don't have time to chop fresh), 2 tsp Italian seasoning, and 5 garlic cloves. I will be making this again!

Double Tomato Bruschetta

My first attempt at bruschetta - and it was awesome! The whole family loved it! Made as a side for the Creamy Chicken Linguini on this site. Was a great pairing since the linguini is on the rich side. I did add more garlic to suit our taste, but other than that it's perfect! I also let the flavors meld for about 1 1/2 hours at room temp. Can't wait to make this again!

Easy Slow Cooker French Dip

Delicious! Used Guinnes Draught as I have in other recipes that call for beer - can't go wrong! And used a Sirloin Tip Roast - same price per pound as the other and the sirloin has a much better flavor. This one's a keeper!

Chicken and Sausage with Bowties

Very yummy! Whole family loved it! Couldn't find turkey sausage so I used Johnsonville mild Italian sausage. Seasoned the chicken with Italian seasoning, garlic salt & black pepper and cooked it together with the sausage and 1 onion (minced) in 2T olive oil and 1T butter. I doubled the sauce recipe and added 1/2 cup heavy cream & red pepper flakes then simmered for 20 minutes. I served it with Kraft Italian 5 Cheese Blend, salads & garlic bread. Definately a keeper!

Slow-Cooker Chicken Tortilla Soup

Fabulous soup! The whole family loved it! I did serve it with two tablespoons of brown rice in the bottom of each bowl as other reviewers suggested - good tip! Making the tortilla strips didn't work out the best; I suggest checking them after 7 minutes so they don't burn like mine did. I always have corn tortilla chips on hand so that's what we ended up using. Worked well.
