Cola Chops

This is the best pork chop recipe for someone who loves tender chops, but doensn't necessarily like the spicyness of barbeque. Putting foil on the bottom of the pan helps with cleanup, and the sauce is terrific for pouring over the chops when you serve them! Thanks for the recipe!!!!!

Irish Cream Chocolate Cheesecake

Terrific cheesecake, but do be careful about making one or two adjustments. I had increased the Irish Creme to 1/3 c as suggested by others, which was WONDERFUL. I used crushed chocolate graham crackers instead of cookies. Also, I used my water bath on a separate rack instead of putting the cheesecake in it (believe me, I ruined 2 of these by putting them inside the water bath). Just place a roaster with 3 inches of hot water into the oven about a half hour before baking the cheesecake, it will come out just beautifully!

My husband loved this when I made it for him. I didn't buy the pastry flour, so I just used regular whole wheat flour and did minimal mixing.

Coconut Cake II

After not wanting to do just another boxed cake for a special family guest, I picked this up out of my recipe box to try it. The reason I didn't give this cake 5 stars is because; 1. The frosting recipe didn't make enough for the whole cake, if you want to frost the sides, you need to double up the recipe. 2. The frosting is grainy and a bit flat tasting. I'd recommend buying coconut extract and using it in both the cake and frosting. Double the frosting recipe and do add some salt to the cake recipe for balance in flavor. I used sweetened coconut flakes that were already chopped up, and put some on top of the finished cake. All in all, a keeper recipe.

Wild Blackberry Pie

Followed the recipe exactly, crust was too dry and not sweet. The berries I used were black raspberries, and the filling recipe given was definitely not sweet enough. I think I'd use a different crust recipe for this, add more sugar and a bit more flour.
