Coconut Curry Tofu

I changed all the veggies (only had a bag of frozen zucchini and peas, 1 can diced tomatoes, and 1 carrot). I hate soy sauce in curries and subbed in fish sauce (only ~2 tbsp). I realize this makes it less vegan, but meh. I also doubled my curry powder and put in my Vietnamese chili garlic sauce instead of chili paste. Despite all the changes, this came out really tasty and could definitely point newcomers to curry in the right direction.

Curried Mustard Greens with Kidney Beans

Very tasty! I subbed in coconut milk for the half and half and just used regular butter. I made mine pretty spicy and added in ~3/4 cup cubed butternut squash and think it turned out pretty good. I also served mine with a combo of barley and quinoa and thought it gave a great texture to the curry.

Butter Chickpea Curry

I thought this was very tasty. I only made minor changes (i.e. red potatoes, white onion, 1/2 can coconut milk, and fresh ginger) and it came out very well. My only suggestion would be to boil your own chickpeas instead of buying a can. Boiling them yourself tastes better anyways :)

Zippy Shepherd's Pie

I love this recipe! I've made it before following the instructions and it was awesome. I've had this terrible craving for shepherd's pie lately, but my dad's diabetic and I was just restraining myself from making it. Then I noticed another recipe that substituted mashed cauliflower on top and jumped at the chance to do that with this recipe. HOLY COW is it amazing! I just boiled and mashed a whole head of cauli; stirred in about a 1/4 pkg of cream cheese and 2 tbsp butter, salt n pepper; put that on top of the meaty pie and dumped a generous amount of sharp cheddar on top of that and in the oven (400 for 20-30 mins depending on if you let yours cool beforehand-- I prepped mine in advance of dinner time). I cannot reiterate how awesome this recipe is prepared like that! Great diabetic substitution!!!
