Sarah's Banana Bread Muffins

I'm giving this a five star because I altered it to perfection! I cut down the sugar to 3/4 cup (and would probably go less next time) as obesity is an undesired outcome of baking. I substituted the vegetable oil for organic, cold-pressed coconut oil and used almonds instead of walnuts. I added an extra banana and used whole wheat flour instead of white. I topped the muffins with unsweetened coconut flakes and sliced almonds just prior to baking. This is a healthier alternative and they still taste like delicious banana bread.

Open Face Mozzarella Sandwich

Really good. I toasted the bread with butter and minced garlic first to prevent it from being soggy. After reading other reviews, I opted to layer the cheese first, then basil, then tomatoes. I used a combination of monterey jack and mozzarella for more flavour and I skipped the olive oil and drizzled it with reduced balsamic vinegar. Delicious!

Cream Of Carrot Soup

This recipe is so easy to make and it turned out just amazing! Yum! I did make changes, however, based on convenience and judgement. I doubled the recipe and added an extra cup of sliced carrots (total of six) as I knew I wanted extra for later. I omitted the celery as I didn't have it on hand, and I substituted vegetable broth for the chicken broth. I didn't want the ginger to be overpowering, so I added a 2 inch chunk of fresh ginger to the pot and removed it later. As well, curry is not my thing, so I added a pinch of cinnamon instead. It really added the perfect kick of flavour. Lastly, I used half and half instead of heavy cream and free poured based on consistency of the soup. It sounds like I changed almost everything, but the beauty of a soup like this is that you can make these changes and it will still come out wonderful!!

Apple Crisp II

Apple mush! I used Granny smith apples and they literally turned into applesauce. There is way too much sugar in this recipe, it makes my stomach hurt. Normally my apple crisp is bubbling, this one wasn't. It had an entire layer of dried oatmeal mixture just sitting on top. Complete fail.

Spicy Sweet Potato Soup

Yum yum yummy! The perfect way to use my sweet potatoes that were on the verge of turning bad. I did however make a few changes. I used half of the requested chicken broth and the other half of water. This helps to lower the sodium content and the flavour is just as amazing since the real dominant taste is the ginger and peanut butter. As well, I substituted the sour cream for greek yogurt, again being health conscious. I omitted the cilantro and tomatoes since I felt they were unnecessary, but for presentation points, I would use them in the future. This is a little time consuming with the chopping, but well worth it.
