Energy Bars
These were awesome! My kids devoured them. Moist, sweet and packed with good things. I made minor substitutions: regular rolled oats, more apricots instead of dates, unsweetened coconut instead of walnuts, honey instead of maple syrup. I love that they have no refined sugar. No peanut butter means they can be sent as a school snack.

Acorn Squash with Apple
My husband thought it was too sweet with the brown sugar, but I liked the squash/apple combination. So I've whittled it down to just chopping and sprinkling lightly with salt and cinnamon, then cooking as directed. So easy. The flavors blend, the apple mellows the squash flavor. This is my favorite way to eat squash. Works well with sweet potato too.

Paul's Pumpkin Bars
Super yummy. Cake is fluffy and moist. This will be a regular recipe for fall, a couple times a year at least. I like the jelly roll pan size, making a good thickness for snacking... The only adjustments I made to this recipe were to the spices and frosting. I didn't add a full teaspoon of salt, but next time I will, as I think it would have rounded out the spice flavors. In addition to the cinnamon in the ingredient list, I added: 1 tsp cardamon, 1/4 tsp ginger. For the frosting I wanted more cream cheese than butter, so I used 4 oz cream cheese, 1/4 c butter. Try this recipe! You won't be sorry.
