Simple Baked Apples

I used pecans instead of walnuts and cranberries instead of raisins. Put it all in my little crockpot and cooked it on high for about an hour or so. I knew it was done when the delicious apple pie smell filled my entire apartment! So simple and delicious. Maybe a little too sweet with both the sugar and dried fruit. Will probably skill the sugar (I used two Stevia packets) all together.

Rainbow Trout with Yogurt Sauce

Asian Rainbow Trout

Yum. Like most others, I substituted olive oil for sesame oil. The side dish I served this with had scallions so I didn't bother adding scallions to this dish. Really light and flavorful. This will definitely go into my list for quick trout recipes.

Grilled Salmon with Peanut Hoisin Sauce

I really enjoyed this. I covered the salmon filets in sauce and put it in the broiler. Came out really delicious. Would pair well with a bowl of brown rice for a healthy, tasty dish.

Thai Tuna Burgers

This is missing something in my opinion. I think I'll try it again and maybe add either ground peanuts or peanut butter to it. There's just something about it that's missing an authentic Thai flavor.

Almond Wild Rice

This was delicious. I used dried cranberries instead of raisins. I love wild rice and the sweetness of the cranberries and the toasted almonds was a great addition.

Breaded Flounder Fillets

Everyone put it best -- this is bland. I seasoned the cornmeal breading with Old Bay, garlic and onion powder and it was still bland. The fish itself probably needs seasoning and instead of cornmeal I would use something with a real crunch to it. But I won't be making this again.

Salmon Steaks With Veggie Cream Sauce

I enjoyed this. I thought that sauce was too thick but it was still delicious. I had JUST run out of bread crumbs so I used some crushed pretzels instead. It provided a delicious crunch to the dish. Really yummy!

Shannon's Smoky Macaroni and Cheese

I'm not a macaroni and cheese fan but I had a lot of leftover smoked gouda so decided to give this a try. I didn't use as much cheese as the recipe called for and used whole wheat penne instead of elbow but it was great. I also didn't have enough parmesan for both the sauce and the crust so I used McCormick Parmesan Herb seasoning with panko bread crumbs and it was great. I actually forgot the olive oil and it still came out great.

Banana Brown Sugar Pancakes

Here are the changes I made: Used melted butter instead of oil, whole wheat instead of all-purpose flour and instead of banana-flavored oatmeal, I used a thawed out frozen banana (very soft and easy to smash without having to wait for the banana to become overly ripe) and quick oats. I also cut the brown sugar down by more than half and added a little cinnamon. Really delicious. Nutty (from the whole wheat) and sweet (from the banana) but not too sweet (because I cut the sugar). I'd definitely make this again.

Sukhothai Pad Thai

With Bes' changes this is a 5-star recipe. Tastes just like the real thing. I suggest using Golden Boy fish sauce, which you can find at an Asian grocery store. Most regular grocery stores won't carry it and it's the most authentic Thai fish sauces out there. There was too much sauce, which I had to drain off and added some cornstarch to reduce to a glaze.

Shrimp Fried Rice II

This was easy and pretty tasty. I added the eggs before the rice but after the shrimp. Next time, I think I will add either rice vinegar or Chinese cooking wine for more of an authentic Chinese restaurant taste.

Ginger Glazed Mahi Mahi

Delicious! I had tilapia filets in the freezer so used that instead of mahi mahi. I marinated for a couple of hours instead of 20 minutes and also used the half the marinade for some green beans. Yum. The fish was light but full of flavor.

Turkey and Quinoa Meatloaf

This was great, the quinoa added a great texture. Maybe too much hot sauce. I would scale it back to half a tablespoon or a teaspoon. Other than that, great recipe.

Jif® Peanut Butter Banana Bread

Judging by the reviews, I realized that this recipe was pretty malleable. I used 1.5 cups of flour and 3/4 cup of peanut flour (instead of peanut butter). I also replaced the oil with 1/2 cup of applesauce. Left the remaining ingredients the same and it came out extremely moist and delicious.

Grilled Fish Tacos with Chipotle-Lime Dressing

The marinade was great. I'll definitely use it for fish tacos again. The chipotle-lime dressing was just okay. I felt like it was missing something to really take it up to the next level. Maybe a hint of sweetness.
