Simple Baked Apples

I used pecans instead of walnuts and cranberries instead of raisins. Put it all in my little crockpot and cooked it on high for about an hour or so. I knew it was done when the delicious apple pie smell filled my entire apartment! So simple and delicious. Maybe a little too sweet with both the sugar and dried fruit. Will probably skill the sugar (I used two Stevia packets) all together.

Rainbow Trout with Yogurt Sauce

Asian Rainbow Trout

Yum. Like most others, I substituted olive oil for sesame oil. The side dish I served this with had scallions so I didn't bother adding scallions to this dish. Really light and flavorful. This will definitely go into my list for quick trout recipes.

Grilled Salmon with Peanut Hoisin Sauce

I really enjoyed this. I covered the salmon filets in sauce and put it in the broiler. Came out really delicious. Would pair well with a bowl of brown rice for a healthy, tasty dish.

Thai Tuna Burgers

This is missing something in my opinion. I think I'll try it again and maybe add either ground peanuts or peanut butter to it. There's just something about it that's missing an authentic Thai flavor.

Almond Wild Rice

This was delicious. I used dried cranberries instead of raisins. I love wild rice and the sweetness of the cranberries and the toasted almonds was a great addition.

Breaded Flounder Fillets

Everyone put it best -- this is bland. I seasoned the cornmeal breading with Old Bay, garlic and onion powder and it was still bland. The fish itself probably needs seasoning and instead of cornmeal I would use something with a real crunch to it. But I won't be making this again.

Salmon Steaks With Veggie Cream Sauce

I enjoyed this. I thought that sauce was too thick but it was still delicious. I had JUST run out of bread crumbs so I used some crushed pretzels instead. It provided a delicious crunch to the dish. Really yummy!

Shannon's Smoky Macaroni and Cheese

I'm not a macaroni and cheese fan but I had a lot of leftover smoked gouda so decided to give this a try. I didn't use as much cheese as the recipe called for and used whole wheat penne instead of elbow but it was great. I also didn't have enough parmesan for both the sauce and the crust so I used McCormick Parmesan Herb seasoning with panko bread crumbs and it was great. I actually forgot the olive oil and it still came out great.
