Jamie's Minestrone

Reviewed: Jan. 19, 2015
My fiancee saw me making this and asked if it was pasta sauce...turned out waaaaayyyy too thick and ended up having to toss it. Unfortunate as it was rather time consuming. Giving it three stars because I used a six bean blend instead of kidney beans, and I halved the recipe, so it could have been my adjustments that did it, but I wouldn't think it would change it to give it a stew consistency. Smelled yummy, though!

Absolutely Ultimate Potato Soup

Reviewed: Jan. 13, 2015
Not bad! Wouldn't call it stellar but pretty good! I halved the recipe and substituted a leek for the onion, just to use it up. I didn't have tarragon or cilantro so used about 1/2tsp of italian seasoning, and blended with an immersion blender but left some chunks. Would probably try again and follow to the T to see if it makes a difference.

Best Brownies

Reviewed: Jul. 4, 2013
Followed this recipe to the letter, with two exceptions: I didn't have honey so I substituted milk instead, and I added unsweetened chocolate chunks to the batter. The frosting turned out fine even with the substitution, and the unsweetened chunks gave the brownies some texture without making it overly sweet. My first attempt at brownies made from scratch and will DEFINITELY make again!

Turkey Pot Pie I

Reviewed: Dec. 27, 2012
Amazing. My only complaint would be that there was no direction on how much turkey to use; maybe that's why I wound up with enough filling for two pies. It's ok. I'm surprised it made it into the Tupperware. I kept sneaking spoons of it. Two thumbs up.

Marinated Baked Pork Chops

Reviewed: Oct. 2, 2012
Fantabulous. Only changes I made were olive oil instead of vegetable oil, and I thinly sliced some onion over top. Served with wild rice and baked beans, and my boyfriend who doesn't particularly care or pork loved the sauce!

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Aug. 6, 2012
Followed the advice of other reviewers and reduced the soy sauce by half, as I don't like salt in general. Also reduced the red wine to two glugs because my boyiend doesn't like wine based recipes. I also added carrots, ushrooms, sliced onion, and red peppers just to give the au jus a bit more flavor. Now, I left it in the slow cooker overnight (oops) thinking I'd turned it to keep warm but having really set it to low; 10 hours later and the veggies are obviously very soggy, but the pork could be cut with a spoon. Great recipe! You wouldn't know it was a $5 pork tenderloin.

Classic Tiramisu

Reviewed: Oct. 9, 2011
My mom used to make Tiramisu as it's my sister's favorite, but hasn't made it in forever. I found this recipe was even better than hers. First, I followed another reviewer's instructions and decreased the sugar to 1/2 cup, and prepared the sugar in the double boiler separate from the egg yolks; I'm not sure what a difference it made as I never made it the other way, I HIGHLY recommend making it in a springform pan. My biggest complaint with my mom's version was that the bottom tended to get soggy because the coffee from the cookies would leak out. That being said, I put a larger bowl under the pan as I worked to absorb the coffee that leaked out. Also, because I was taking the cake to go, I froze it for a few hours beforehand. It kept its shape PERFECTLY on the drive over, made slicing it much neater, and even though the center was slightly frozen, I'd probably just not freeze it as long next time. Great recipe. Loved it.
