Baked Dijon Salmon

Reviewed: May 15, 2013
I made this and did the following substitutions: I halved the sauce and breading because I only used 3 filets. It was still plenty. I also added a pinch of garlic powder, Italian Seasoning and Red Pepper flakes to the breading mixture because it seemed a little to boring to start off with. I omitted salt. It was delicious. I would have given it 5 stars if there was more seasoning in the breading mixture.

Cheesy Chicken Meatballs

Reviewed: Jun. 14, 2012
I will definitely be making these again but I have to say the recipe was VERY heavy on the garlic (and I LOVE garlic) I only put a sprinkle of garlic powder and the garlic was still too strong so I suggest omitting that. Also, if you don't like really spicy food, half the red pepper flakes. They were so moist when raw that I used a cookie scooper to get them on the sheet. It actually worked out good because it was less mess. Because I couldn't roll them they didn't look like a traditional round meatball, but who cares because they are delicious.

Spinach and Orzo Salad

Reviewed: May 28, 2012
I made this recipe exactly as posted and it was very bland and tasted like a bowl of balsamic dressing. I won't try it again because it took too much time and ingredients to take a chance. I wish I had listened to other reviewers in adding additional ingredients.

Italian Sausage Soup

Reviewed: Jan. 23, 2012
Perfect Sausage soup. I used Red Pepper Provolone Sausage and it was DELICIOUS. I added more garlic (out 5 cloves total), omitted the salt and replaced it with Italian Seasoning. I will be making this again, for sure. Thanks for the recipe.

Mexican Pizza I

Reviewed: Oct. 28, 2011
I made this and everyone loved it. The only changes were to put the olives and tomatoes on the inside (I omitted green oninos, chilies and avodaco because family doesn't like them). I topped them with sour cream and EVERYONE loved them.

Cheesy Sausage Pasta

Reviewed: Oct. 25, 2011
This was a delicious easy meal that the whole family liked. I did make a few changes to the original recipe though. Instead of shells, I used Rotini. I omitted the onion. I used rosemary chicken sausage. Instead of heavy cream I used evaporated milk. I added about 1-2 tsp of Italian seasoning. I will definitely make this again.

Slow Cooker Chicken Taco Soup

Reviewed: Sep. 14, 2011
This is a really hearty soup but I was expecting more flavor. Next time I will use 1 can of mild and one can of spicy chilies with tomatoes. I will also add 1 or 2 garlic cloves and some fresh cilantro.

I made this in my slow cooker for 6 hours on low. Next time I think I'll do it for a little less time. Other than that it was DELICIOUS.

Slow Cooker Chicken Stroganoff

Reviewed: Jul. 20, 2011
I changed up the recipe using several other reviewers ideas. Instead of margarine I used butter. I added 1/2 cup of white wine with the chicken/butter/italian seasoning. I used Reduced fat cream cheese. This is one of the best crock pot chicken recipe's I've ever made. Everyone (including my picky son) loved it! I will definitely be making this again.

Personal Portobello Pizza

Reviewed: Jul. 9, 2011
This recipe was so delicious and simple. I made it for the family using 5 mushrooms and multiplied the recipe by 5. The only change I made was to use turkey pepperoni as I am on Weight Watchers. Each pizza was 5 plus points. I served it with fresh crusty bread. It felt like I was dining at a cafe. This is definitely going in my rotation for simple and yummy dinner.

This was so easy and delicious. I omitted the hot sauce and cooked on high for 4 hours after returned to the crockpot for 45 minutes on low after shredding the chickin. Everyone loved it and I will absolutely make this again.
