Pecan Pie V

A pecan pie made without Karo syrup intrigued me. So I thought I'd make this one since I always have brown & white sugars, but I have to buy Karo syrup especially to make a pecan pie. Also, I try to make recipes as written the first time trying, but I didn't have milk, so I used half & half. Other than that I used the exact ingredients. I baked at 400 degress for 10 mins & then 350 degrees for 35 mins. Was really good, but a little dry. So I made again exactly as I did the first time and just baked 40 mins at 350 degrees, and my son declared it the best pecan pie he's eaten. He ate the whole pie except 2 pieces. The taste is phenomenal. This is the way I'll be making pecan pie from now on!

Roasted Brussels Sprouts

I did slice sprouts in half but otherwise followed the recipe exactly, and these were absolutely delicious! My family likes brussels sprouts anyway, but this was a pleasant change from the typical way we serve brussels sprouts. Will definitely make this recipe again.

Caramel-Apple Crisp

The first time I made this I used granny smith apples and followed the recipe exactly and it was very good. The second time I made this I used half bartlett pears (4) and half macintosh apples (4) only because it was what I had on hand, following the rest of the recipe exactly but baked in a 11x7 glass dish and it was absolutely delicious!!

Chicken and Gnocchi Soup

Really tasty! Only change I'd make is next time I'm slicing the carrots instead of shredding. I didn't use the cornstarch water combo and it still thickened nicely.

Best Mud Pie

My son wanted an ice cream cake for his 18th birthday, but I made this pie instead. I only used about 2 Tbsp of chocolate chips mixed in the first ice cream layer & it was plenty with the coffee ice cream. Topped the Cool Whip with rainbow sprinkles instead of crushed oreos & chocolate drizzle. He loved it!

Chocolate Chip Banana Muffins

These muffins are so good! Only change I made was sour cream for the yogurt because I didn't have any yogurt on hand. Used mini-chocolate chips. The muffins are so moist and have great balance of banana/chocolate flavor. Great recipe!

Lime Cilantro Rice

Tripled this for a 50th birthday fiesta. Served as an accompaniment to Chicken Kabobs Mexicana & Kris' Amazing Mexican Beef both from allrecipes.com. I did wash the rice a bunch before actually cooking which did help with it not being sticky like rice can be. Didn't actually measure the cilantro, just chopped until I thought it looked like enough. I didn't think it tasted like Chipotle's, but was about as close as I think I could get it. Lots of compliments from the party guests! Will be making again but on a much smaller scale.

Chocolate Cavity Maker Cake

I used milk chocolate chips because it's what I had on had, but followed the rest of the recipe exactly. Sprinkled with powdered sugar after turning out of pan. Cake was to die for when served warm & really good with vanilla ice cream. Only reason I gave 4 stars is because once it cooled, it was not quite as moist as I was expecting, but at the same time not too dry. Still a really good chocolate cake recipe and will definitely make again, because it is a very good cake, and my son really liked it. Would also serve to guests or bake for a special occasion.

Happy Shrimp

My boys love this recipe, but I do double the sauce. Instead of heavy cream, I use half & half. We have a local winery that makes a white wine called Hot Jazz - made with jalapenos - this is awesome made with that, but it's really good made with even cheap white wine. I use more than a pinch of cayenne also (my boys like spicey) and serve over angel hair pasta. I always make this for my son before he goes back to college - it's his favorite!

Kris' Amazing Shredded Mexican Beef

This is probably the absolute best recipe I've ever tried from this site. Tripled for a 50th birthday fiesta - I didn't change any of the ingredients, just tripled them - and it was a hit, even after warning about the heat! Served with tortillas, refried beans, lime cilantro rice and other toppings . . . everyone at the party loved it. Thanks for posting this awesome recipe!

Chicken Kabobs Mexicana

I scanned allrecipes.com for recipes for a 50th birthday fiesta for my husband. Came across this kabob recipe & made to serve 4 to see if they would be a good item to serve at the party. I let marinate for a few hours and they were good, so I gave them a whirl for the party but since I was making so many (for 30 people) I prepared the chicken the day before so the chicken marinated for 24 hours and also added about a tablespoon of minced garlic and that was the key to them being great! Everyone raved about them! Served with lime cilantro rice and four fruit salad from this site and also from this site served Kris's Amazing Shredded Mexican Beef with tortillas and condiments - - - All great items to serve for a fiesta . . . even got a couple of requests for me to cater graduation parties! These recipes are awesome!
