Slow-Cooker Chicken Tortilla Soup

Delicious! I followed the advice of other reviewers: added a can of black beans, used all chicken broth instead of water, and used raw chicken tenders and let them cook in the crockpot, shredding with forks with about an hour to go. This was super easy and very flavorful. I will definitely make this again.

Heavenly Scotch Ham

Huge success. Cooked this for Christmas dinner. My sister-in-law, who is a professional cook, asked for the recipe! Huge hit with everyone. Even I liked it, and I am not a huge fan of ham. I cooked exactly to recipe, and it worked great. I think the leftovers even got better with time, as they continued to soak in the scotch-brown sugar glaze.

Chantal's New York Cheesecake

WOW! Rich, creamy, outstanding cheesecake. I made this gluten free and lower-fat and got RAVE reviews from the family when I served this at Christmas dinner. My sister-in-law, a professional cook, even asked for the recipe! To accommodate my celiac husband, I substituted GF graham style crackers in the crust and used a GF all-purpose flour mix in the cake. Because I like a "darker" flavor profile, I also used brown sugar instead of white in the crust and about 3 tsp of cinnamon---this gave the crust a nice pop that my guests loved. I used neufchatel cheese, 1% milk, and fat-free sour cream, to reduce calories. Despite this, the cake came out amazingly creamy and rich, with a wonderfully decadent mouthfeel. I would never, ever have guessed that this cheesecake was either GF or lower-fat, if I hadn't made it myself!

Cranberry Pot Roast

Easy and delicious. I found the cranberry flavor to be just right -- not overpowering, but definitely there. It added a really interesting sweet, complex flavor. I added large chunks of sweet potatoes and carrots to the slow cooker, as well as a tot of dark spiced rum, and substituted a gluten free flour mix for browning the roast (for my celiac spouse). I will definitely make this again.

Squash-Apple Bake

Wonderful! I love winter squash, but my husband isn't crazy about it. I've been looking for ways to prepare squash that he would enjoy, and this was a BIG hit! The only change I made was to use 1/8 tsp nutmeg instead of the mace, which I didn't have on hand. We served along with slices of a delicious apple-chicken sausage; the flavors went so well together than I sliced up the remaining sausage and mixed it in with the leftover squash-apple bake to reheat together. Next time I make it, I'll include some sliced sausage right in the baking dish and make it a one-dish meal!

Danny's Warm and Fuzzy Apple Cider

Yummm! This got rave reviews at a harvest festival. One guest described it as "boozy apple pie." So delicious! I used fresh-pressed cider and omitted the brown sugar, as I always find good cider to be plenty sweet already.

Roasted Tomato Salsa I

Time consuming, but the rich smoky flavor is worth the effort. Don't discard the charred skins! These are what give this salsa its distinctive flavor. I strongly recommend making this the day before -- it is good fresh, but even better after the flavors and spices have a chance to settle and mesh together. This is a very flexible salsa with lots of room for experimentation. Try adding extra garlic and extra jalapenos for a richer, spicier flavor. Today I made a batch, and realized at the end that I had no limes in the house, just a lemon -- the substitution worked beautifully and the lemon adds a brighter note. Yummy!

Carrots in Dill Butter

Wow! Easy and very, very delicious. The carrots come out tender but not squishy, and the dill is delightfully present without being overpowering. This is my new favorite carrot dish!
