This recipe tastes really delicious, and compliments the chiffon cupcakes I made really well. However, i had a hard time getting That "stiff peak" for piping. I did go ahead and piped what I could without making a mess and stuck the cupcakes in the fridge. They then began to firm up. I believe next time, I will allow the icing to firm first and then pipe, or add a touch of powdered sugar to help the icing stiffen better.
