Cheesy Scalloped Potatoes with Ham

Oh my, this is good! I have made ham & scalloped potatoes with creamed soups in the past & my husband's response was "ho hum," but he LIKES this recipe. I just spooned some heated canned peas over the scalloped potatoes when serving because I wasn't sure about the peas in the recipe, but they added a nice flavor. Used a whole medium onion and doubled the garlic & onion powder as some reviewers have suggested. Also added a little cayenne pepper for a touch of spicyness & liked the result. Last of all, I put too much salt in, so I made another 1/2 recipe of the sauce without salt to fix that & really enjoyed having the extra sauce in the dish. Will make it that way every time. I sliced the potatoes 1/4" and it did take an extra 1/2 hour to cook, even at 400 degrees. Will slice the potatoes thinner next time. Thanks for the great recipe!

Beef Caldillo Stew

A very tasty, spicy stew. Three pounds of meat seemed like a lot, so I cut it back to 2 pounds. The meat was nice & tender. I agree with other reviewers that it could use more sauce-there wasn't a lot. The instructions call for salsa casera, but that is not listed in the ingredients. Turns out that is just regular salsa. I put in a cup of medium salsa, and used 2 cans of Rotel tomatoes. Also, for the salsa verde I used Mexina Salsa Verde, a green tomato salsa on this site. I had a yam that need using so I threw it in with the potatoes, & it was good. Some green peppers might be good too, and possibly corn or hominy. It also might be good served with rice instead of tortillas. You could also start it earlier in the day & use a crock pot. Great base recipe. Will definitely make it again.

Green Pozole

I've never had posole before, but I really liked it. For the salsa verde I used Mexina Salsa Verde, a green tomato salsa on this site. Couldn't find a dried pasilla chile so I used a dried New Mexico Hatch chile, which wasn't at all hot, so also added a jalapeno. I cut the meat 1/2" pieces, but did not brown it. The pork was fairly tough. Still, it was a very flavorful soup. I will definitely make it again.

Green Tomato Cake

I made this for the 1st time today and took it to a football party. Followed the recipe exactly, dicing the tomatoes by hand, and frosted the cake with cream cheese frosting. I got A LOT of compliments.

Mexina Salsa Verde

My husband made this salsa to take to a football party today. In addition to the listed ingredients, he threw in a little fresh basil, used 1/2 lemon juice b/c we didn't have enough lime juice, and put in a little vinegar as some reviews suggested. The vinegar made it too strong/sour so he added 1/2 t. sugar. Then it was perfect! He got several compliments on it.

Surprise Inside Independence Cake

Loved this cake! The cake mixes now are only 16.25 ounces, so I bought an extra cake & added 2 ounces from it to be sure the cake turned out good for a birthday party. Also subbed in white chocolate instant pudding mix to keep the batter whiter. I used 25 drops of red food coloring for the red layer, and still had pink batter & 15 drops of blue gave a light blue. Will use even more next time. The frosting recipe does not say to sift the powdered sugar before measuring, but I did since most frosting recipes I've used say to do that. Perhaps because of that, I only needed 1/2 c. heavy cream to get the frosting to a spreadable consistency. Even so, I had enough frosting for the cake, with a little left over. My guests were impressed & the cake was delicious.
