Favorite Peanut Butter Cookies

Reviewed: Oct. 29, 2005
These were fantastic. I added a Hershey's Kiss to the center of each cookie. They didn't last long!

Pumpkin Cake I

Reviewed: Oct. 29, 2005
This is a fantastic cake. I also use this recipe to make mini pumpkin muffins. Also great with cream cheese frosting. I have also made this recipe using applesauce to replace half the oil and found that it tastes just as delicious as the original recipe. Pecans also work well if you don't have walnuts on hand.

Fantastic! I didn't change anything from the recipe and it turned out perfect. Not only does it taste great but it is very quick and easy to prepare.

The Best Meatballs

Reviewed: Dec. 11, 2005
I took the easy way out on this and used prepared bread crumbs and prepared shredded romano cheese because it was all I had in the house. I used beef and pork and eliminated the veal. It was still excellent. I used italian seasoning and basil. I used a little less water and less olive oil for frying. These were very tasty!

Best Marinara Sauce Yet

Reviewed: Dec. 11, 2005
This was a great basic recipe to work with. I added more garlic and basil to the recipe. I also added about half the amount of white wine called for and found that it was more than sufficient.

EAGLE BRAND® Mini Cheesecakes

Reviewed: Dec. 11, 2005
These were very good but I thought they needed a tad of sugar added (even with the sweetened condensed milk). Others who had them thought they were great as is. They made a nice presentation. I baked them all and then topped some with mini chocolate chips, some with mini chocolate chips, caramel, and a pecan ("turtle" version) and some with cherries. I would use this recipe again.

Butter Rich Spritz Butter Cookies

Reviewed: Dec. 12, 2005
These turned out very tasty. However, the dough was too firm to go through my cookie press. After adding a little more butter, the consistency was right and the cookies turned out well.

Carrot Cake

Reviewed: Apr. 23, 2006
This cake was very tasty. I cut the oil by half and added apple sauce and it was still delicious. Upon the suggestion of other reviewers, I did use another cream cheese frosting recipe.

These cookies are easy and excellent. I used an entire bag of mini semi sweet chocolate chips, about 1/2 cup of coconut, and nuts. Delicious!

Light, Crisp Waffles

Reviewed: Sep. 16, 2006
These really are the best. I made them for a brunch/shower and had several people call for the recipe days later. Getting the egg white nice and fluffy is key and don't over-stir the batter once the egg white has been folded in. I made some in a regular waffle maker and some in a belgian waffle maker. I prefered the belgian waffles as they were crispier and had a better texture.

Very good. I used half cream and used chicken broth for the other half. I added a little more parmessan and finished the dish with pine nuts.

Creamy Rice Pudding

Reviewed: Dec. 30, 2006
This recipe is simple and delicious. I omitted the egg and added a little extra vanilla and cinnamon. It tastes great warm or cold. I just made this again and added Craisins instead of raisins - delicious!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Dec. 1, 2007
This is excellent. I took several shortcuts and it still tasted great. Here are my changes: I used Pepperidge Farm cubed stuffing as the base. I also needed to add extra stock (I used chicken broth). I used Jimmy Dean sage sausage and did not add the liver. This was very easy to prepare and it looked and tasted fantastic.

Chocolate Pecan Pie III

Reviewed: Dec. 1, 2007
Delicious! I used butter instead of margarine and otherwise followed the recipe exactly. I have made this several times and it tastes great with dark corn syrup as well (I was out of light). This is quick, easy, and really good.
