Easy Batter Fruit Cobbler

Quick, easy and excellent. I double the recipe and bake in a 9 x 13 pan. A combination of peaches and blueberries is delicious.

Buffalo Chicken Dip

Basic Quiche by Shelly

This was a great base recipe. I omitted the cheese called for in the recipe and made my own variations. Cheddar and bacon is nice. Sauted onion and julienned zuchini with goat cheese was amazing.

Banana Muffins I

This muffin is good if you are looking for low fat / low calorie options. In comparison to other low calorie muffins, this one really is very tasty. I added 1/4 cup chopped walnuts and 1/4 cup mini chocolate morsels. With these changes, each muffin is 128 calories. As others have said, these are small muffins and you might prefer to make 9 instead of 12 for a fuller muffin.

Special Buttercream Frosting

I used half butter and half shortening. The first time I made this I didn't whip it long enough. The second time I let it whip for much longer and the texture was much improved. I used a half recipe and had enough to frost a 3 layer cake (with leftovers).

Delicious Ham and Potato Soup

This was excellent and very fast to put together. I followed the recipe exactly except I didn't have any chicken boullion so I left that out. I also added a bit of celery salt. It turned out great.

Connie's Zucchini "Crab" Cakes

This is a great way to get in lots of veggies. I added shredded carrots and minced garlic and left out the Old Bay. I tried them fried in oil and baked. For the difference in calories, there was not a huge difference in taste. I'll bake them from now on.

Garlic Chicken

This was so easy and very tasty. I roasted garlic and mixed that with the olive oil. I let the chicken sit in that mixture for about 3 hours before adding the bread crumb mixture and baking. The roasted garlic gave a really nice flavor. The chicken was also very tender and moist.

Cream Cheese Frosting II

Delicious. I use reduced fat cream cheese (not that it really matters with the calories in a recipe like this!) and it still tastes very good. Works great with carrot cake and pumpkin cake.

Autumn Cheesecake

This is an excellent dessert. I did not use nuts in the crust. As other reviewers suggested, I doubled the filling (I think it would have been very skimpy otherwise). I did not find the water bath to be needed during baking. The last time I made this without one it still turned out perfect. I did not have to microwave the apples - just tossed them with cinnamon and sugar and placed them on top. Overall this is easy and tastes fantastic.

Chocolate Pecan Pie III

Delicious! I used butter instead of margarine and otherwise followed the recipe exactly. I have made this several times and it tastes great with dark corn syrup as well (I was out of light). This is quick, easy, and really good.

Awesome Sausage, Apple and Cranberry Stuffing

This is excellent. I took several shortcuts and it still tasted great. Here are my changes: I used Pepperidge Farm cubed stuffing as the base. I also needed to add extra stock (I used chicken broth). I used Jimmy Dean sage sausage and did not add the liver. This was very easy to prepare and it looked and tasted fantastic.

Creamy Rice Pudding

This recipe is simple and delicious. I omitted the egg and added a little extra vanilla and cinnamon. It tastes great warm or cold. I just made this again and added Craisins instead of raisins - delicious!
