Amish White Bread
This is an EXCELLENT recipe for white bread! I don't think you could go wrong with it, bu here are some tips! 1. Weight your flour instead of using cup measurements. It is more accurate. 2.lower the sugar for a fluffier and less sweet bread. 3. Rub shortening on your hand before you knead the dough, prevents it from sticking to your hand. 4.Make sure you use GOOD AND NEW YEAST. Thr first time i made the bread i use some left over old yeast and i came off really bad. I switched to SAF yeast and my bread came out wonderful.Also be patient and wait until the yeast misture is foamy and creamy. Trust me, it is worth the wait. 5. When i am in a hurry, i mix the dough first.put it in a oiled bowl cover with plastic wrap and put it in the fridge. After about 6 hours the dough rises beautifully! I punch it down then knead it for a few more minutes 6. I tried using all-purpose flour instead of bread flour and it works just fine. You might need a little more flour and the texture is slightly different. 7. Don't put too much oil in your tins, the dough will absorb it and prevent it from rising. 8. They make great buns! Just divide and shape them then bake for around 20 minutes. (try adding a tiny sausage in the middle!) 9. Brush butter on the baked bread to give them a great look and better taste.
