Butternut and Apple Harvest Soup

My whole family loved this recipe! It's delicious, makes a lot and is really easy to make, especially if you buy butternut squash that's already cubed, like I did. The only thing I added that wasn't in the recipe was a couple of teaspoons of cinnamon and also kicked up the amount of nutmeg, salt & pepper too. Besides topping it with the chives, we also topped it with cheddar croutons. It would also be great served with BLT's or grilled cheese.

Melinda's Porcupine Meatballs

I've made this recipe for 35 years and it's one of my family's favorites. I think I got it from my Betty Crocker cook book. My kids all requested the recipe when they moved out and now make it for their families. I do agree with some other reviewers that, if the recipe is followed exactly, it can be a little bland. I've learned to spice it up some over the years. I add extra seasoning (italian, more garlic and onion powder) to the meatballs as well as some of the worcestershire sauce. And I also add more seasoning to the sauce...more worcestershire (because we like the flavor), garlic, onion powder and some ketchup, or sugar or even brown sugar. We serve it on toasted french rolls, like a meatball sandwich but it's also good alone with side dishes. Great as leftovers too. I didn't know it could be cooked in the oven though. That's good to know.

Stuffed Green Peppers I

I've made this recipe a few times and we love it. I usually use ground turkey instead of ground beef. I also add a little more seasoning to the meat & rice mixture, like garlic and italian seasonings, and I also double the worcestershire sauce because we like it. I also use tomato sauce in place of the tomato soup and put a spoonful inside the peppers before filling them, so the sauce is throughout the filling when you eat it. Tonight when I made them, I had the meat already cooking when I realized I was out of rice, so I used orzo instead and doubled the amount of water, then still let it simmer 15 or until the orzo was tender. It still turned out great!

Banana Crumb Muffins

I LOVE THESE MUFFINS!! When I make banana bread or banana muffins, I want it to taste like BANANAS and not spice cake with a hint of banana flavor. Until I found this recipe, I was disappointed all the others I tried. Without a doubt, this recipe results in a delicious banana flavor! I've made both muffins and bread from this recipe (Increase baking time to about 30 min & keep an eye on the crumb topping so it doesn't burn). It's so easy to make because all the ingredients are things most everyone has in their pantry. And the crumb topping adds just enough extra sweetness and texture without overpowering the muffin/bread flavor. Plus it smells incredible when it's baking! Everyone I've made these for has loved them. The only addition I have made on occasion is adding about a 1/2 cup chopped walnuts to the batter. Now that I found this recipe, overripe bananas don't get thrown out any more!

Amish Breakfast Casserole

This is also really good with ham instead of bacon. I make breakfast casseroles for our Christmas morning large family get together and this is one of everyone's favorites.

Tomato Chicken Parmesan

My family loved this recipe, despite the fact that, instead of the montery jack slices, I substituted a pre-grated italian cheese mix which didn't melt well. It tasted fine, just didn't look as nice. Next time I'll try the montery jack. And the only other change I might make would be to pound the breasts between wax paper so they're thinner.

Cheesy Southwest Chicken Soup

I put together this recipe to try to duplicate one of our favorite restaurant's soup. After tweaking the recipe a few times, the result is even better than the restaurant's. It has a lot of ingredients, but it's very easy to make. It's delicious!

Bacon Ranch Pasta Salad

This was so easy and really good! I doubled the recipe for a party, so I had LOTS of salad! I took the leftovers to work and it was gone in minutes! I had several people ask for the recipe. I only made a couple of variations: I used real bacon bits instead of frying my own (for time saving purposes). I omitted the cheese and added broccolli. I also used halved grape tomatoes. You could probably do lots of variations,and it would still be really olives, artichoke hearts, other veggies or cheeses...I think it's the ranch dressing mix and the bacon bits that make it unique. It also seems to taste better the next day because the flavors have blended more. So I'd reccommend making it the night before.
