Pop's Dill Pickles

Good Basic Recipe for pickles. I made this by cutting my cucumbers into spears and cutting the blossom end off. I could not locate fresh dill heads and did not want the little pieces of green on the pickle, so I used dill seed. What I liked about this recipe is the right balance of salt and sweet, the sterilization instructions, and the amount of processing time, and the fact that you can adapt this recipe to your tastes by adding garlic or hot peppers. I did add 1/4 tsp of pickling crisp to each of my quart jars based upon advice from other Canners. I used two tsps of dill seed per jar and added half of a seeded serrano pepper to two of the 4 jars. My daughter is intrigued by the process so I am going back to the farmer's market for more cucumbers. Thanks for sharing a great recipe that takes me down memory lane. UPDATE After 8 wks, we opened a jar and they were delicious. The pickles are crunchy and the taste of the dill, garlic, salt, vinegar, and sugar are perfect.

Italian Sausage Soup

Great! I made this during a snow day when everyone was home. I added some alphabet pasta during the last 10 minutes of cooking to make it exciting for my kids. This recipe is definitely becoming a regular.

David's Yellow Cake

Very moist. I made this cake for my son's 1st birthday and made a fudge frosting. He loved it. The cake was moist and fluffy. Plus this recipe yields 2 8-inch cakes, perfect size for a family of four. I will definitely make again.

Holiday Eggnog Pie

Great Recipe! I used a 9.5 inch pie to avoid the run over that other reviewers complained of and sprinkled the pie with nutmeg prior to baking. I also used a hand mixer to make sure that all of the ingredients were beaten together extremely smooth. The pie was perfect. Next time I'll back it like a creme brulee in a waterbath without the crust.

Beef Tamales

This is a great recipe. Next time I make it I will definitely increase the salt. I did not add a lot out of fear that the tamales would be too salty. I did find it easier to puree the peppers in my blender with a cup of the beef broth. When I attempted to grind them in my mortar, it did not do anything. Another difference is I added baking powder to the tamale dough because the masa corn that I purchased indicated this as a key ingredient. My tamales came out great. I bought 5 bags of corn husks instead of 3 and I used most of them. I would definitely make this again.

Southern Fried Chicken Gizzards

I followed the recipe exactly. I have been eating fried gizzards all my life and part of the fun is the chewiness of the gizzard. I would make again for someone who can't chew well but as a true Southerner I like the chewy side of things. I do heavily season and boil gizzards when I make dirty rice.

Bev's Chocolate Pie

Original Homemade Italian Beef

This recipe was nice, very flavorful. I made this for my family and thought that reducing the peppers to two with no juice would omit the spicy side of this dish, but I was wrong. My kids could not eat this so I had to make another meal for them. I think this recipe is perfect for crowds. Would make again for a football party.

Detroit Hot Honey Wings

I made this for Memorial Day and we ate all of them. I did follow some suggestions and omitted the salt. I added garlic powder to the rub and fresh crushed garlic to the sauce. I heated the sauce on low for a few minutes to take the raw taste out of the garlic. This recipe is a keeper.

Bacon Wrapped Pork Medallions

I made this on a school night for the family. I followed this recipe exactly using thick sliced bacon by Smithfield. I'll make it again with a few variations. The tenderloin will be marinated in Italian dressing and I'll omit the salt. This will ensure flavor throughout the pork. Also, I'll put this on the grill. Overall it was delicious and the kids loved having bacon.

Slow Cooker Chicken Stroganoff

Great Slow Day Recipe! My kids eat this every time. I add frozen pes and carrots during the last minutes of the recipe and allow it to cool before serving. My son was 14 months old the first time I made this and he cleaned his plate twice!
