Salmon with Pineapple Tomato Salsa
I liked this salsa recipe. I made the salmon my own way and served the salsa room temp on the side. I didn't make it up far enough ahead to put in the fridge. I had to substitute white onions for the scallions so I only used 1/2 the amount. I also about doubled the sugar-it was too tart for my taste. I used key lime juice as that's what I had in house. Maybe it's more tart? I also added a splash of the pineapple juice from the can. I used fresh Romas and basil from my garden. I had more dressing than I needed. I had about 1/4 cup leftover.Picture is of my salsa only.

Black Bean and Corn Salad II
Made 1/2 recipe. This was really good! I loved the lime dressing. I had key lime juice so that's what I used. I didn't have black beans so I used white beans. I used leftover corn on the cob. No red pepper, I was out. And no cayenne, as my family doesn't like things too spicy. This was good with corn chips and just as good eaten right off the spoon. It was even better the next day-and I added another 1/2 avocado and a squirt of lime juice.

Chicken, Garlic, and Sundried Tomato Pasta
Made this tonight. Very good. I didn't have sun dried tomatoes so I used 2 fresh Romas, fresh from my garden. I only had fat-free soup, next time I will use full fat version but it still tasted good. I only used 3/4 of the can and added more milk. Then I used a little of the pasta water to thin it. I like my pasta with more sauce than the photo showed. I used leftover fried chicken breast, just removed skin and bones and cut in bite size pieces. Had 1-1/2 breasts. Made it very economical and quicker.
