Fish Tacos

I spent about a year experimenting with various fish taco recipes, and this one came out on top. I follow it to the letter, except that I have started substituting tilapia for the cod. The baja sauce is awesome!

Corn and Black Bean Salad

Very, very good. I made a few changes... grilled 2 ears of fresh corn instead of using canned, and also cut up 2 grilled green onions to mix with the beans & corn. (Also used homemade beans, which always helps!) In addition, misread the recipe and stirred the cilantro right into the dressing instead of using as a garnish, but since I was serving it right away instead of refridgerating it didn't matter. Finally, added the zest & juice of one lime to the balsamic mixture, which added a nice depth of flavor. However, the key to this recipe is the spice combination, which is right on... I will be using this dressing a lot!

Brussels Sprouts with Pecans

I very much liked this recipe. My bf did not, but I have yet to discover a vegetable recipe he does like. Definitely still had the distinctive brussels sprouts taste, nicely mellowed by the seasoning.

Grilled Cilantro Salmon

I was kind of nervous making this... thought it would come out way too sweet. It was actually just right, although the honey really overpowered the other flavors, even though I only used about a 1/2 cup. In the future, would add white wine and maybe some red pepper flakes to cut the sweetness. Also, I used this marinade (in a separate bowl) for a pork chop for my boyfriend who doesn't eat fish... he liked it. Finally, I must have used a small salmon filet, because 5 min per side was too much. 3 would have been better.

Salmon Rosemary Burgers

I usually alter recipes a little, but after reading the other reviews, I followed this one to a tee and it was GREAT! The patties held together really well, and tasted so good the bun seemed in the way. Served it with green beans and a light pasta salad for a terrific summer meal.

Cavatappi with Spinach, Garbanzo Beans, and Feta

Great quick vegetarian recipe... I love that you can just mix everything right into the pasta at the end without using another pan. However, I thought the 4 cloves of garlic were too strong, especially crushed, since we were still biting into big chunks of almost-raw garlic. Next time, would mince and possibly saute the garlic. Also, would consider using artichoke hearts in addition to or instead of the beans.

Mock Tuna Salad

I used dijon mustard instead of spicy and minced red onions instead of green ones. I also added 12-15 capers, chopped cilantro, and chopped dill pickle instead of the relish. It was fantastic! The flavor was very close to tuna fish... maybe even better. The texture was not quite right, although not unpleasant... maybe if the beans were pureed it would be closer? All the same, a great substitute or even replacement for tuna salad.

Spinach and Red Chard Quiche

I left out the red chard b/c I couldn't find it in the grocery store... added extra spinach and mushrooms instead, along with 5 or 6 leaves of chopped fresh basil. Next time, would use a homemade crust and mix the cheese (used swiss instead of cheddar - personal preference)in instead of sprinkling it on top at the end. Still, very good, and as a new veggie, a great way to experiment with tofu.

Italian Portobello Sandwiches

I mixed up the mayo ahead of time and marinated the onions and mushrooms in balsamic and olive oil, and then added oregano, salt, and pepper when I sauteed them. Left out the red peppers b/c I don't like them, and the cheese b/c I didn't have any. Still, fabulous sandwiches!!! I've already made them twice since getting this recipe a week ago.

Lime Chicken Picante

I was a little doubtful about this marinade, but it was great! I have a hard time finding healthy dinner recipes for my boyfriend and I but we both loved this one. I did add some extra hot sauce to the marinade to give it a little extra kick.
