Lentils and Rice with Fried Onions (Mujadarrah)

I also thought this recipe was rather bland. I even added some spices to doctor it up and it still tasted like boiled lentils with white rice. It made a ton - unfortunately noone wants to eat the leftovers!

Addictive Sweet Potato Burritos

YUM! Just finished eating these - they were delicious! I also used black beans instead of kidney beans. I am happy that I made the whole recipe so I can take leftovers for lunch tomorrow. Great recipe!!

Tofu Parmigiana

I have never cooked with tofu before - so I took other reviewers suggestions and bought extra firm tofu and froze it overnight. I let it defrost for 3 hrs but it still was frozen. I took a reviewers suggestion of pouring boiling water to defrost but that still took a while. I used flour, egg, then breadcrumbs in order to make the crumbs stick better. I also baked prior to sauteeing & also used a jar of Bertolli marinara (I thought tomato sauce would be odd on its own). The finished product was delicious. My husband said it tasted like very tender chicken parm. I would make this again but I would defrost in the microwave next time!

Syracuse Salt Potatoes

My husband and I met in Syracuse - and he is from Potsdam (way upstate) - he is ALWAYS asking for salt potatoes as a side dish. This recipe gave me the ratios I needed to make him happy. Thanks :)

Grandma Johnson's Scones

These are awesome! I made them for a family breakfast and multiple people actually said "These are the best scones I've ever had". I made them with chocolate chips and will be trying them using many different variations.

Blueberry Coffee Cake I

This was yummy - but I did make the modifications suggested in the other reviews. I used two eggs, 3/4 cup buttermilk & halved the streusel topping. I baked it in a 9" springform pan for 55 minutes on 350 and probably would go a little less next time as the outer later was a little harder than I expected.

Broiled Tilapia Parmesan

This is SO good & so easy to prepare! I have made it a few times and I have to say that I think it came the best with the 1/2 c added breadcrumbs. Delicious! I haven't had a more tasty piece of tilapia in any restaurant!

Cousin Cosmo's Greek Chicken

Wasn't really impressed. I followed this exactly except used chicken broth in place of the water/buillon. Not much flavor & there was a ton of thin liquid in the pan. Wouldn't make this again.

YUMMY! I made these with whole wheat flour, less sugar, and without the ground cloves...these were delicious! So moist and flavorful..and not bad for you! :)

Tunnel of Fudge Cake IV

This cake was extremely heavy and more like fudge. My boyfriend has been wanting me to make this for him (his grandmother used to make it)...but I have yet to find the right recipe!
