I worked in a bakery years ago. This is the closest to their buttercream I have found. It's devine! It freezes perfectly too. Just thaw slightly and throw it back in the mixer for a few minutes.
Beat the heck out of this stuff!! I remember the baker running his big mixer an hour or more when making a batch of icing. I have made this three times now. The first time I put it in my stand mixer on med/high for 25-30 mins. The second time, I only mixed for 15 mins or so and it didn't quite behave right. The third batch is mixing now. This I added 1 1/2 T lemon juice to, as it's for lemon cake. It's been running 20 mins and needs a few more.
