Chocolate Mint Dessert Brownies

I also use a box cake mix. I get so many compliments on this recipe! One co worker asked me to make her a bowl just of the mint frosting. Definitely will keep making this!

Best Tuna Casserole

I use whatever noodles I have in the house and whatever cheese as well. I've had cheddar, mozzarella and Parmesan and it always turns out well. I mix all the cheese into the casserole and then top with bread crumbs. I think mixing all the cheese in helps with it being dry a bit.

Easy Butternut Squash Ravioli

These take a little bit of time and coordination since you're boiling a few at a time and warming in the butter at the same time. I felt a little like I was on an assembly line but they turned out delicious! I subbed out the mascarpone for greek yogurt (because I completely glazed over that ingredient while shopping), and it turned out great. Left out the sage, and probably tripled the cayenne.

Quick Pickled Jalapeno Rings

Great use for the two large bags of jalapenos that came in our CSA box. Very easy, kept well in the fridge and were delightfully hot! And I highly recommend wearing a pair of rubber gloves, taking out your contacts later might be painful otherwise :)

Downeast Maine Pumpkin Bread

My husband loves to make this recipe! I'm not sure if it's all the praise he gets for it (because it's delicious) or because he likes playing with the Kitchenaid, but either way it's a hit in our house. We've used the spices listed, or just subbed totally for pumpkin pie spice and both times it came out great. We also baked to two loaf pans for closer to 70 minutes, checking every 5 minutes or so after the 50 minutes mentioned.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

I've made this soup so many times and it continues to be a favorite! I never blend it up, I prefer a chunky soup. I like to add a little garlic to the veggies when they are cooking down and I go heavy on the chili powder, usually skip the yogurt. Served with a crunchy piece of bred to soak up the brother - perfect!

Great recipe, very easy. I went a little lighter on the oil and it made more of a paste which I used as a spread on sandwiches. Very tasty!
