I'm not a fan of super sweet cornbread, so I was eager to try this recipe. My husband does like his cornbread sweeter, so I compromised and added a bit more honey. Turned out great! We liked the not-too-crumbly, yet still very hearty, texture. As a side note, the next time I made this, I doctored it up for my 21-month-old by using a 1/2 cup veggie puree in place of half of the yogurt (or sour cream is good too). This worked really well.
Made again today as corn dog casserole ... Used this recipe and added 1 c. shredded cheese and 6 cut-up sauteed hot dogs. Baked as directed. Yum!
