Pork Chops with Dill Pickle Marinade

Never thought to marinate pork chops in dill pickle juice. I used a little less than a cup since I didn't have a full cup. It certainly doesn't need additional salt, but I wouldn't say they turned out salty. I added a touch of garlic, mustard, ginger, and pepper. They were great!

Richard and Suzanne's Famous Red Beans and Sausage

This recipe is good, but doesn't need the fat. I threw it all into a crockpot (used dried beans) and cooked it all day, so no need for sauteeing the vegetables first. I decided to use some chicken stock for added flavor. You can throw in a can of tomatoes too. This recipe is a good starting point.

Cornmeal Waffles

I was excited by the fact this was a healthier recipe, but in reading the reviews, I decided I should add a little fat in to help the final product. So, I did use 2 whole eggs instead of 4 egg whites. I also added a couple of tablespoons of coconut oil. Even with the added fat, this recipe was lacking something. It just didn't have much flavor, and even though I don't mind a heavy whole grain waffle, this was really rather heavy. I wouldn't recommend this one.

Whole Wheat Pancakes

Chocolate Chip Cake

In my pursuit of making things I like at least a little healthier, I adjusted this recipe by doing the following: Substituting coconut oil for butter, using soy milk instead of regular milk, and using all egg whites. It was really good! I agree with others that the cake is a little heavy and dense, but it makes sense.

Peanut Butter Pie

This is surprisingly light and really smooth. I decided to add all of the whipped cream in at once, not creating a separate layer. I also added just a bit more peanut butter. Yum!

Black Hills Golden Egg Bake

I made this recipe as written the first time around ... excellent! I omitted the olives the second time around ... still superb! I then got creative and used broccoli and onion instead of mushrooms, green pepper, and olives ... awesome! This basic recipe tastes wonderful and allows you to change up the veggies added.

Great Easy Waffles

These were the best waffles I've ever made at home. I did use buttermilk (and added a bit of baking soda) because that's what I had on hand. They were so light and crisp. Yum!

Corn Bread Squares

I'm not a fan of super sweet cornbread, so I was eager to try this recipe. My husband does like his cornbread sweeter, so I compromised and added a bit more honey. Turned out great! We liked the not-too-crumbly, yet still very hearty, texture. As a side note, the next time I made this, I doctored it up for my 21-month-old by using a 1/2 cup veggie puree in place of half of the yogurt (or sour cream is good too). This worked really well. Made again today as corn dog casserole ... Used this recipe and added 1 c. shredded cheese and 6 cut-up sauteed hot dogs. Baked as directed. Yum!

Dill Pickle Meatloaf

This was really neat! The flavor and crunch of the pickles works so well. I took the advice of others and made sure to blend my bread into crumbs so there were no big pieces of bread. I also doubled the sauce, and it was worth it. Thanks for the great new and different meatloaf recipe.

Green Chili Rice Casserole

This is a good savory recipe for leftover rice, and it went really well with some tamales a friend gave us. I imagine it'd be a nice main dish if you added some chicken to it. I will try that next time.
