Potato Salmon Patties

Some long lost memory from my childhood surfaced the other day and left me hankering for these...had a can of salmon and went for it. "Just like Mom used to make" :-) Wife liked 'em so I will make them again for sure.

Chicken Parmesan

Once you get your production line going you can turn these out pretty fast & they make a really nice entree. One word of caution...be careful not to let your oil get too hot and watch them closely when they are cooking...it is very easy to burn those bread crumbs. I make these fairly often and mix it up a bit at times and top with different sauces, cheeses, a slice of ham or some bacon....pretty versatile entree. Frozen and vacuum packed...when my two sons come to town there won't be any of them left in the freezer when they leave:-)

Ruth's Grandma's Pie Crust

I am no baker by any means but decided to try this and surprise my wife of 30 years who is an accomplished baker. I used the crust I made for a chicken pot pie and son....not going to say it was the best there ever was, but I have not had any better. Great crust! I would agree with another reviewer that there is not quite enough for two full crusts. Or maybe I could have rolled it thinner if I had known what I was doing:-)

Authentic Louisiana Red Beans and Rice

Lord knows how many recipes I have for Red Beans & Rice...been making it for years. With a couple of minor tweaks this is now my go to recipe. In addition to the andouille (no substitutes here) I will add another pound of meat...chicken or ham are great. I also use small red beans instead of kidney beans. Excellent product....I use it in my catering business.

Colleen's Slow Cooker Jambalaya

I have tried "lots" of Jambalaya recipes and over the years have come up with a pretty good version of my own. I happened across this one and thought "No Way"....can't just throw everything, raw meat and all into a crockpot and come home to a decent product. Well yes, apparently you can:-) I was very pleasantly surprised. Not going to say it is the best ever, but it is VERY respectable. I have for sure had much worse in more than one restaurant. Nice job on this recipe!

Sweet Restaurant Slaw

I'll tell you what...I run a BBQ Catering business & I had about given up on serving slaw. I refuse to buy ready made and I just could not find a recipe that I liked. This slaw has been a bit of a lesson for me...as for myself, I can hardly eat it...it is waaay too sweet. The customers on the other hand, have attacked it. I have served it 4 times now and always get lots of positive comments...and none left. I actually watched one guy come back for thirds. 'Nuff said:-) The last batch I did cut back the sugar by about a third. Still sweet but nobody complained.

Chef John's Banana Bread

I have tried several of Chef John's recipes and have not been disappointed yet. I am a 65 yr. old guy who has always loved to cook, do some BBQ catering etc., however I am no baker. But...there laid 3 bananas that needed something done with them:-) I followed the directions exactly as this was one of my first tries baking anything. It was beautiful when it came out of the oven and tasted great. I was stunned:-) It did fall pretty badly after cooling though. Likely a result of my technique? I follewed the recipe exactly because I intended to review it. It blows my mind when a reviewer follows up their comments...good or bad...with the disclaimer that "I changed everything about it" ?!? Chef John's Stuffed Peppers

I am torn here & not really sure how to rate this. I have tried several of Chef John's recipes and have always been impressed. Until now. I am giving serious consideration to fixing this again to try and figure out what I did wrong.

Chicken Pot Pie IX

Over 6,000 reviews and 5 stars speaks for itself! I made an effort to stick to the recipe and was well pleased with the results. A keeper for sure. The only change I made was to add some sliced mushrooms.

Scim's Fettucine Alfredo with Shrimp

The only thing I changed was to use equal parts half & half and heavy cream...plus chopped a couple of cloves of garlic into it. Very nice...quick, simple & easy. Will make again for sure.

Golompke (Beef and Cabbage Casserole)

I have to say that my expectations were pretty low here...and I am not going to say that it is as good as my wife's Cabbage Rolls as they are killer. That said...while this needs some spice IMO, it is pretty dang good and it is hard to imagine anything being easier/faster to put together. A good one to keep in the back of your mind for those days when you want something a little different or don't have much time.

Beef Stroganoff with Noodles

I actually made this according to the recipe...unusual for me:-) My only change was to use fresh mushrooms instead of canned, which may have caused the only problem I had. The sauce was too thin, so maybe the fresh mushrooms gave up more liquid than canned would have? Either that or I should have used more cornstarch. At any rate...easily correctable next time. Flavor was excellent & I will make it again. It was also a little on the bland side...but I did omit most of the seasoning salt...and a few garlic cloves wouldn't hurt it. Overall, a good recipe.

Sarah's Rice Pilaf

Simple, quick & easy...but most of all very good. I made it according to the recipe and added about a half cup of frozen peas and one small carrot, finely minced...then chopped 4 scallions and threw in at the end. Much better than any boxed mix I have tried. Not to mention way cheaper. A keeper!
