Squash Cookies

These are some of my favorite cookies! I get lots of butternut squash from my local farm share & I look forward to making these every year. I substitute craisins for the raisins, because they look so pretty against the squash color, and walnuts for pecans (walnuts are healthier nuts) & I toast the nuts first. I have trouble not over-eating with these cookies around!

Curried Chicken and Brown Rice Casserole

This was really really yummy! And easy. The only change was I added some diced carrots because I was trying to use them up. My boyfriend and I loved it - comfort food indeed! Thank you!

This cookie is actually less time consuming to make than most! A plus for weeknights. The key to making these is to coat the countertop with a dusting of flour before rolling out the loaf. Otherwise it's a very sticky mess. I tried just coating my hands with cooking spray but that didn't work. Just a pinch of flour did the trick. I also chopped my choc.chips up before loading them into the loaf. Use zest if you can; the orange/chocolate flavor is soooo delicious!

Spinach Cheese Squares

I continue to get raves whenever I bring this dish to a party. As is, the recipe is a little too greasy & fatty for my taste so I followed some of the other readers' adivice and made the following changes: used two eggs melted one T.butter in the baking dish used 2c. cheddar and 1/4c. parmesean Thanks Irene!

Apple-Cranberry Crisp

This was a delicious way to use the plentiful fall apples. I used walnuts and macintosh apples because that was what I had on hand. It smelled soooo good cooking in the oven. Very good seved with Vanilla ice cream. Thanks Christina!

Minnesota's Favorite Cookie

These cookies are sinfully delicious! I made a couple of substitutions based on what I had on hand, and also to try to cut down on the fat a smidge. I added a heaping 1/4c of chopped walnuts, semi-sweet chips & white chips then added around a 1/2c of mounds coconut flakes. Dangerously addictive! Thanks Barb!

Baked Basil Fries

soooooo delicious! My boyfriend and I ate so many right off the pan there were hardly any left to put on our plates for dinner! I cut my red potatoes really really thin and they were fully cooked in 15 minutes. Don't forget to spray the pan/foil with cooking oil, or else they'll stick something fierce. We were scraping the pan to get every last morsel these were so good. Thanks!

Saltimbocca alla Pollo

I LOVE this recipe. The flavors go so well together, and making it gave me great ideas on how to experiment with other dishes. The rolls look so pretty too, it is a good recipe for company. Thickly chop up some summer squash and zucchini, add them to the simmer towards the end, and then serve all with tri-colored pasta coated with extra virgin olive oil. YUM! Thank you Sue!

Stephan's Broiled Salmon Pesto

Excellent. I made my own pesto, I only needed about a cup, slathered it on and broiled it for around 20 min. The crispy pesto melted in our mouths. I made for my folks who thought it was exquisite. I served with pasta w/ the remaining pesto and a green salad. Thanks for the idea!

Brownie Biscotti

I like my biscotti a bit harder, but these tased great! I reduced the baking time to 5 min on each side per the reviews and perhaps my cookies would have been harder if I had had baked it the full time. I made them for my mom for mother's day and she loved them. Thanks!

Lemon Poppy Seed Biscotti

Excellent. I had no trouble with my dough sticking together - it was very sticky in fact! I coated my hands w/ cooking spray while I was forming the logs. I used a silpat instead of parchment paper. I followed advice of others and increased lemon extract and reduced poppyseeds by one tablespoon. I made them for mom for mother's day and she loved them. Thanks!

Sweet Pea Mockamole

I thought this was delicious! And I was able to use the leftovers, mixed with a little tomato sauce, on pasta and pizza; kind of like a pesto. Very healthy and appealing to the eye too.

Banana Oat Muffins

I love these muffins for breakfast. Like others, I substituted applesauce for the oil. If you use a non-stick muffin pan, like me, just don't bother with the muffin cups at all. I add 1/2 t. cinnamon and 1/2 t. allspice for extra flavor. The potential add-ins are endless. I like walnuts, or even chopped apple, slice almonds, coconut... YUM!

Jay's Signature Pizza Crust

This is a GREAT pizza crust! Like others have said, just the right amount of crispiness. The recipe makes two pizza crusts for me. Also, I add 1-2 T. of tomato sauce and 1/2 t. of garlic powder with the salt and oil for a little extra flavor. Lots of room for experimenting there, with different herbs, etc. YUM! Thank you Jay!

Thit Bo Xao Dau

I loved this recipe and have made it several times. Very easy and quick to prepare. Once I substituted beef broth for chicken and the results were tasty and rich - kind of beef-soupy. Instead of taking the beef out I left it to simmer with the green beans which made it more succulent. This dish is also good served over ramen noodles.
