Baked Potato Skins

Came out great! They're not very healthy, but great to make for company- everyone loves them! I added finely chopped garlic, chives and a little more Parmesan cheese than the recipe called for. Made with bacon bits because it's all I had in the house, but it still came out good. I'm sure it would have been even better with real bacon.

Irish Soda Bread I

I cut the recipe in half and filled up 12 muffin tins instead of baking it in a loaf. I baked it at 325 for about 50 minutes. I wanted to make sure they weren't doughy in the middle, but 50 minutes might have been a bit long when they're so small. They were a little crispy on the outside but perfect inside! I added my own mixture sprinkled on top before I baked the muffins (cinnamon, sugar, ground nutmeg & ground ginger.) That was a nice addition. I wouldn't recommend using paper muffin tray liners though. Because the recipe doesn't have any butter in it, the batter stuck to parts of the liners. Just greasing the muffin pan would have been better than using liners. But overall, I was happy with the recipe and the small changes I made to it. Went great with my corn beef and cabbage Irish dinner.

Annie's Fruit Salsa and Cinnamon Chips

I made this appetizer at a Superbowl party as a healthier alternative to the wings, fried food, chips & dip that crowded the rest of the table. To my surprise, the fruit salsa went the fastest! My guests loved it! I fancied it up a bit by putting the fruit in a hollowed out pineapple half. It not only tasted great- it looked nice too! There are lots of variations you can use with this recipe, but I find harder tropical fruits that are easy to chop into small bits work the best (Mango, pineapple, strawberries, kiwi, guava, papaya etc...) Apples go brown too quickly, bananas are too mushy and berries are too hard to chop into small bits. I wanted it to be finely chopped to make it easier to pick up with the yummy cinnamon chips.
