Spicy Grilled Shrimp

This recipe is fabulous! I made it with some veggies, rice pilaf and the mango-avocado salsa from this website and it got rave reviews. This is definitely a keeper!!!

Avocado-Mango Salsa

This salsa is so good! I made it to go with a spicy shrimp recipe I got from this site and also grilled chicken. I added cilantro and reduced the salt as other reviewers suggested. It was fabulous! I had some leftover so we will see how good it is tomorrow!

Bob's Awesome Lasagna

This is a really great lasagna recipe - easy to make, goes together pretty fast. The only change I made was to use ricotta instead of cottage cheese and I also added a little garlic powder and parsley to the meat when cooking. I did cover the dish with foil the first 45 minutes of cooking then I took off the foil and cooked it for 15 minutes longer, broiling the last 3 or 4 minutes. Delicious!

Saltimbocca alla Pollo

This recipe is delicious - especially with added mushrooms! I also changed a few things to cut down on the fat content. For 3 chicken breasts I mixed 1 1/2 teaspoons olive oil with 1 Tablespoon minced garlic. I brushed this on both sides of the chicken then sprinkled both sides with black pepper - no salt (the prosciutto has enough salt). I then wrapped one piece of prosciutto around each chicken breasts - I didn't roll up the chicken. I pan fried the chicken in 2 tablespoons of butter until brown on both sides. I then removed the chicken from the pan, deglazed the pan with about half of the white wine, added one can of sliced mushrooms and cooked for a little then added the rest of the wine. I then put the chicken back in the pan, covered it and simmered until the chicken was done. To thicken the liquid I mixed 1 1/2 tsp cornstarch with 1 1/2 tsp cold water then added to the pan. I also added a little chicken broth to make more of the yummy gravy. Spoon the mushrooms and gravy over the chicken and it is delicious!!!

Chicken, Stuffing and Green Bean Casserole

This recipe wasn't bad but it didn't do anything for us either. I won't be making it again. I made it by the recipe and included the french fried onions on the top like the other reviews stated. I kept some of the leftovers to try it again tomorrow, however it just doesn't beat a plain chicken casserole. I think this recipe tries to include too many different types of ingredients.

Garlic Chicken

This recipe is wonderful. I used minced garlic and added extra to the oil and I also sprayed the chicken with garlic flavored PAM. I used Italian flavored breadcrumbs and added a dash of red pepper to the crumb mixture. Will definitely make this again.

Pan-Fried Asparagus

I make this alot - it is wonderful!!! I only use half of all ingredients except asparagus and it turns out great. It is best when you use the smallest asparagus you can find.
