French Breakfast Muffins

These are great! My entire family enjoyed them. The batter is REALLY thick, and the muffins are dense...sort of like pound cake. We will be making these again...and again!

Chicken Asparagus Roll-Ups

Wow! Very delicious! Even the kids ate the asparagus. Not a fan of tarragon, so I used lemon pepper. My husband commented on the very professional presentation...looks like restaurant food!

Crispy Orange Beef

This recipe earned my rave reviews all over email and FB from my husband!! This is his favorite Chinese food. The only concern we had was that I didn't slice the beef thinkly enough. Next time, I will try to slice it while frozen, or else ask the butcher if he can slice it thinly for me.

Hidden Cheeseburger

These were amazing! Everyone in the family enjoyed them. They were quite large, so next time I will likely make smaller patties. I didn't have time to thaw my bread dough, so I used refrigerated pizza dough from a tube. It turned out well. I had extra patties, so I froze them and we reheated them later and ate as burgers. They have a great combo of flavors all in the one patty. This is a keeper.

Chicken Breasts in Caper Cream Sauce

Great chicken dish. I pounded the chicken, so it was thinner. The dill really gives it a slightly different taste than my other chicken piccata recipe. My family asked for this one again!

THE Pasta Salad

This pasta salad was amazing. It had the perfect amount of dressing, so that it didn't end up dry or goopy. I added some shredded carrots, diced summer squash, and diced zucchini and then increased the amound of dressing slightly to account for increased ingredients. It was great on night one, as well as for several more days as leftovers!

Uglies

This recipe was awesome! My husband and toddler loved them. I didn't roll the biscuits, but just flattened them between my palms. Because of that, I didn't get as much filling in each cup, so I was able to make more (another entire roll of biscuits). They freeze and reheat wonderfully. My son thought they looked like cupcakes, so he decided he was getting a "special treat"!! I will add these to the regular line-up.
