Spicy Chipotle Black-Eyed Peas

We love we had this tonight and it was great! I made some additions of jalapeno instead of Adobe because I didn't have any. I also added spinach, roasted diced tomatoes, kale, potato. It was soon good along with homemade cheese bread. YUM!

Vegetarian Kale Soup

I think of recipes as great beginnings - I followed this recipe mind you, I just embellished. I added a rind of Parmesan reggiano and 1 tbls of balsalmic vinegar..It was so amazing! It was great before mind you; but, I love the hints of balsalmic and the saltiness of the cheese rind.

Homemade Black Bean Veggie Burgers

Mine fell apart a bit, should have read the comments first. However, with the partial falling apart, the flavor was outstanding. I added jalapeno to the green pepper which added another depth of flavor. My husband loved them!

Grilled Fish Tacos with Chipotle-Lime Dressing

This was the best fish taco I have ever had; great texture, spice and deep flavors. I too, like other reviewers, baked the Tilapia in the oven at 350 for 20 minutes and it came out perfect. I added chopped white onion to my Salsa (I took all the toppings and combined as a salsa) and added additional fresh lime juice. This was awesome!!! Thank you Mabcat.

Zucchini Soup II

This was so simple and had great depth of flavor. I did make a few alterations. I used olive oil instead of margarine, I used chicken stock instead of water and only pureed 1/2 of my vegetables so that it had more texture, and I added a 1/2 cup of sharp cheddar cheese and probably a two cups of white, dry wine. YUMMO!!!!
