Banana Fritters

I substituted whole wheat flour and honey instead of sugar. If you like really sweet you may want to increase the honey to counter the whole wheat flour, but I prefer slightly less sweet and this was perfect. After frying I drizzled more honey and dusted with cinnamon. It eliminates all of the refined sugar and flour, and is still delicious! About as healthy as a donut is going to get!

Banana Cupcakes

I made these with whole wheat flour and a simple cream cheese frosting for my son's first birthday. Based on other reviews I substituted softened butter and whole milk for the shortening and buttermilk. The adults said they were good, and my baby seemed to thoroughly enjoy his first cake experience!

Lime Chicken Soft Tacos

really good, but not 10 servings. i doubled the chicken and sauce, and served 4. we didn't make pigs of ourselves either...it tasted bland at first, but i did increase the lime and vinegar just a bit and added some cayenne. also didn't have oregano, so i used thyme. when made into tacos with avocado, tomato, cheese and plain yogurt it was really really good! compliments all around.

Sweet Potato and Carrot Soup with Cardamom

pretty good. i also would decrease the cardamom a bit, otherwise great flavor and spice. i did add a bit more broth at the end, as it was pretty thick. Served it with grilled cheese the first night, and over brown rice for lunch the next day. flavors really developed overnight, and it made great leftovers.

Jeanie's Falafel

Pretty good! All I had in the cupboard was a bag of dried garbanzos and some odds and ends, but I was able to turn it into falafel! I used chicken stock instead of water to get the right consistency. I rolled them into 12 balls and fried them in a couple inches of olive oil, 3 minutes per side. Served them with tahini sauce made from tahini, lemon juice, water, garlic, parsley, cumin, and sweet curry powder.

Red Lentil Curry

this is pretty good as written, but i did make some changes to up the nutrition a bit. i added a chopped red pepper, 2 cups shredded spinach, and 1 cup chopped carrot when i added the tomato. i also added a dash of cinnamon, some additional sea salt and ground pepper. i garnished with chopped almonds. lovely.

Oatmeal Raisin Cookies VII

this is a good base oatmeal bar recipe, but i had to put them in an 8x8 pan, there wasn't enough dough for a 9x13. i used whole wheat flour + 1/2 t of baking powder. i also decreased the sugar to 1/2 c per other reviews. flavor and texture were right on. i didn't pay so much attention to cooking time, but rather just took them out when the edges were beginning to brown. i'm going to make another batch with chocolate chips. i think cranberries and white chocolate will be good too!

Streusel Topped Blueberry Muffins

These are fine muffins! I made them with my 6 year old niece. It's a great recipe to make with kids because each step is easy to follow and they are delicious, so it's very rewarding!They rise well, and are moist with good flavor. Addendum 9/5/2009 Just made these again using whole wheat flour and fresh cherries. Still wonderful.

Lentil Soup

This was pretty good. I used water because I didn't have broth on hand, so I doubled the spices and vinegar. I used half balsamic and half red wine vinegars. I also added a dash of crushed red pepper and generous amounts of black pepper. I went easy on the salt. The lentils cooked through in about 45 minutes. It was good right away, but the leftovers are better now that the flavors have had a chance to blend.

Southwestern Grilled Chicken with Lime Butter

This is an excellent recipe. i first used it in the summer for a barbeque, and then recently made a slight variation to make it a fall dish. I omitted the lime butter altogether, and included sliced apples in the rub/marinade along with the chicken. i arranged the apples on top of the chicken and baked at 350 for about 40 minutes, til the apples were soft and the chicken cooked through. I served it to guests, and it got rave reviews.

Sweet Rice (Zarda)

This turned out well, but it originally calls for WAY too much sugar. I only put 3 cups instead of 4, and it was still a bit too sweet. Everyone ate it and said they enjoyed it, but there was a discussion about the sweetness and the amount of sugar called for. I had to use ground cardamom (couldn't find whole). I also made it in the rice maker, to save time and space. I added the food color and 1 teaspoon cardamom to the rice maker with the rice and water (no soaking). When that was finished I heated 1 1/2 teaspoons cardamom in oil and added cooked rice, sugar, and 2 cups of skim milk. I let this simmer about 5 minutes, and added the nuts, fruits, and ricotta. It was delicious in the end.

Easy Indian Style Okra

I doubled everything in this recipe except for the butter. I was following another reviewer who suggested that we would want leftovers, and I'm glad now that there are leftovers in the fridge. Also, I added an extra 1/2 teaspoon of the spice mixture, it is yummy! I made this with pasanday and zarda, and served with warm pita (couldn't find naan). It was a really good meal.

Pakistani Pot Roast Beef Fillets (Pasanday)

This turned out delicious, but to really be fall apart tender it needed to be simmered for much longer than 25 minutes. I used top round and simmered for close to an hour and a half. It could have even been simmered longer, but we were hungry! I also added a little flour to the sauce to thicken it up just a little bit, it definately didn't need any added water, there was plenty of liquid.
