Wiener Schnitzel

Reviewed: Dec. 5, 2013
This recipe is the closest I've found to the real thing. I used pork cutlets instead of veal, but otherwise followed the recipe exactly. The cutlets turned out really crispy and light, and the leftovers were amazing the next day even after reheating in he the microwave! Can't wait to make these again...

Bean Soup With Kale

Reviewed: Dec. 5, 2013
Great! I didn't have cannellini beans, but used a 16-bean soup mix instead. Also threw in some cubed ham for the carnivores in the family. So easy & satisfying- will be making this frequently this winter.

Cheesy Ham and Hash Brown Casserole

Reviewed: Nov. 28, 2011
Not bad, but not my favorite either. It was a little gritty, for lack of better term. I think it might be the cream of potato soup - something about it seemed too heavy? Can't quite put my finger on it, and don't have any useful suggestions - I think I need to fool around with it a bit and see if I can tweak it to my tastes.

Spinach and Potato Frittata

Reviewed: Nov. 14, 2011
Loved this! Really easy, filling, and easy to change up. I added leeks and bacon, but you could tweak this a hundred different ways. I made this in my ancient cast-iron skillet and don't have a fitting lid, so once I added the eggs, I put in the oven at 350 for 12-15 minutes until it was set. Got rave reviews from brunch guests and picky hubby.

Easy Slow Cooker French Dip

Reviewed: Jan. 25, 2011
I'm giving this 5 stars, because even though I botched it, I can see the potential for greatness! How is it possible to botch something with 4 ingredients, you ask? Easy - use the wrong beer. I shopped for and made this on a Sunday, so I couldn't pick up a beer specifically for the recipe. I figured the hubby would have something suitable in the beer fridge, but no dice. He usually has a good selection, but all he had left was a Summit EPA (which he didn't recommend) but since everything else was in the crockpot already, there was no going back. (Clearly, organization was not high on my list that day). Summit EPA is, indeed, a terrible choice for this. It's pretty hoppy out of the bottle, and stewing for 7+ hours doesn't change that - if anything, it makes it more pronounced. The au jus was, to my great dismay, downright bitter. LOTS of salt and plenty of bread and cheese later, it was edible, but no where near how good I imagine it *can* be. The meat took up only a tiny bit of bitterness so it was still good, and it was amazingly tender. I plan on making this again next week, but will definitely plan ahead and stock up on Guinness or something similar.
