I'm giving this 5 stars, because even though I botched it, I can see the potential for greatness! How is it possible to botch something with 4 ingredients, you ask? Easy - use the wrong beer. I shopped for and made this on a Sunday, so I couldn't pick up a beer specifically for the recipe. I figured the hubby would have something suitable in the beer fridge, but no dice. He usually has a good selection, but all he had left was a Summit EPA (which he didn't recommend) but since everything else was in the crockpot already, there was no going back. (Clearly, organization was not high on my list that day). Summit EPA is, indeed, a terrible choice for this. It's pretty hoppy out of the bottle, and stewing for 7+ hours doesn't change that - if anything, it makes it more pronounced. The au jus was, to my great dismay, downright bitter. LOTS of salt and plenty of bread and cheese later, it was edible, but no where near how good I imagine it *can* be. The meat took up only a tiny bit of bitterness so it was still good, and it was amazingly tender. I plan on making this again next week, but will definitely plan ahead and stock up on Guinness or something similar.
