Delicious Pineapple Muffins

We love this muffin. I changed it up just a bit. I used a 20 oz. can of crushed pineapple instead of an 8 oz. can. I also added the pineapple to the batter as some have suggested. I sprayed my paper liners with Pam also..sure helps to get the paper off of the muffins. I used a different topping as I wanted the muffin to taste kind of like a Pina Colada.I made a coconut streusel. 3Tbs.shredded coconut,2Tbs.melted butter,4Tbs sugar,2Tbs.flour and I added a 1tsp. of coconut extract.They turned out wonderful and I felt like I was at the beach.

Pina Colada Muffins

The muffins are wonderful.very moist. I changed it just a little by adding extra rum extract and 1 tsp. of coconut extract.I also used a 20oz. can of crushed pineapple. I used dryed coconut chips in the batter and sprinkled sweetened shredded coconut on top before baking. the topping came out nicely toasted. I also sprayed the cupcake papers with Pam which kept the muffins from sticking to the papers.I will be making these agan..Reminded me of being at the beach.

The Old Boy's Strawberry Pie

This turned out really good.I followed the suggestions from another reviewer and cut back on the sugar in the berries.They were sweet to begin with.I also used her topping made with brown sugar, oatmeal, butter, flour and cinnamon. I thickened my strawberries with quick tapioca instead of flour just because thats the way I've always thickened my fruit pies. I will bake this pie agan.

Italian Sausage Soup with Tortellini

My husband and I loved this..So filling and good. We enjoyed garlic bread and a glass of wine with it. I didn't bother peeling and seeding the tomatoes instead I chopped up cherry tomatoes and added them and it worked out fine.I also used dried spices instead of fresh.I felt like I was in Italy eating this.

Pineapple Banana Bread

I made muffins instead and the batter made 24 reg size muffins.. I added chopped walnut to the batter and sprinkled a combination of sweetened coconut and crushed walnuts on top...I did use coconut extract instead of the vanilla.. they are so good.

Individual Cheese Balls

very good and very easy to make... I halved everything because I only had 1 pkg of cream cheese. I did add more worcestershire sauce and some salt and fresh ground pepper.I made one large ball.

Cream Cheese Filled Pumpkin Muffins

these are so good..taste like pumpkin bread with cream cheese spread. I sprinkled brown sugar on the top also as suggested. I also used brown sugar Splenda in the mix.

Walnut Biscotti

These are the best ever.This is my 3rd try making Biscotti and they came out perfect.I used the suggestion using the bread hook on my mixer and it really worked well as the dough was very stiff. I also rolled out the dough the way other Biscotti recipes call for. Can't wait to have one with my coffee.

Orange Cake

A wonderful cake. I changed the recipe per suggestions from other reviewers. I used vanilla pudding instead of lemon, used orange extract instead of the lemon and added 1 Tbs of orange zest.

Apple Crumb Pie

This pie is wonderful...I used Splenda white sugar in the filling instead of regular. I used Splenda brown sugar for the topping. I sprinkled the walnuts on top instead of putting it in the filling.My husband loved it.

Basic Chicken Salad
