Chocolate Chip Oatmeal Cookies
We love this recipe..My husband took some to work and now everyone wants the recipe. I did change it just a bit to use up what I had in the pantry..I put half mini chocolate chips and half peanut butter chips in and used old fashion rolled oats and added a little more pecans as my husband loves nuts.He said they taste like granola cookies.They taste great with ice cold milk or a cup of coffee in the morning.

Delicious Pineapple Muffins
We love this muffin. I changed it up just a bit. I used a 20 oz. can of crushed pineapple instead of an 8 oz. can. I also added the pineapple to the batter as some have suggested. I sprayed my paper liners with Pam also..sure helps to get the paper off of the muffins. I used a different topping as I wanted the muffin to taste kind of like a Pina Colada.I made a coconut streusel. 3Tbs.shredded coconut,2Tbs.melted butter,4Tbs sugar,2Tbs.flour and I added a 1tsp. of coconut extract.They turned out wonderful and I felt like I was at the beach.

Pina Colada Muffins
The muffins are wonderful.very moist. I changed it just a little by adding extra rum extract and 1 tsp. of coconut extract.I also used a 20oz. can of crushed pineapple. I used dryed coconut chips in the batter and sprinkled sweetened shredded coconut on top before baking. the topping came out nicely toasted. I also sprayed the cupcake papers with Pam which kept the muffins from sticking to the papers.I will be making these agan..Reminded me of being at the beach.
