Pecan Breaded Chicken Breasts

This was was way too bland and the flavor of the pecans and chicken didn't meld together. Some reviewers noted that they added spices before the pecans but I don't know if that would even be enough to save it.

Thai Chicken Spring Rolls

I have tried a few spring roll recipes and this is my favorite so far. I had to make a few adjustments since grocery store didn't have all ingredients: I subbed baby kale for watercress and I hate canned sprouts, so left them out (excited to make this in the spring when I can get them fresh though). Made my own peanut sauce using a simple recipe on this site. Put in a full cup of cilantro since I love it. Dipped rolls in sambal olek (chilli paste) since peanut sauce really stuck to the chicken. Next time I plan to add lemongrass to make them even better and will mix the chilli paste in with the chicken just to make it easier to eat.

Chicken Breasts with Lime Sauce

This was delicious and easy. I don't usually like breaded chicken with lemon, so I was really making this for my husband, but I loved it as well. I sautéed the chicken in olive oil to cut down on fat. Served it with the "garlic quinoa" and "Mediterranean kale" from this website.

Chili Rellenos Casserole

Flavor was good but it came out as a soupy mess. I noticed that some reviews said only 5 oz evap. Milk but some said the entire can of 12 oz so I was confused. I used the whole can and maybe that is why. I cooked it longer than suggested when I noticed that it wasn't firming up, but that didn't help. I did notice that when I pit the leftover away that it was a little better, so letting it rest might help.

Delicious Black Bean Burritos

Before I rolled up the burritos all I tasted was cream cheese with some heat from the pepper.. Added more beans, more cilantro, and cumin and chilli powder as others suggested but it still was not good. Baking the tortillas first also made them crunchy and they broke when rolling up.

Black Bean and Corn Salad II

Made without any changes and received many compliments at a Memorial Day cookout. Nice light side to go with all of the heavier food. I might try fresh corn cut from the cob next time to make it even better if I have more prep time to spare.

Pork and Shrimp Pancit

Good recipe but I thought it needed more of a "kick" so we added some chili garlic paste on our plates. Thought lemon grass would also work well. I don't know if those 2 ingredients would be used in Philippine cuisine, buying think they would make the dish even better. I was okay with the texture of the noodles but my husband thought they were too mushy. Next time we might try less soaking and more sautéing to get a crunchier or firmer texture. Still an enjoyable meal as is!

Garlic Quinoa

I thought this was just a little heavy in the chicken broth so next time I will reduce the amount. It reminded me of the pre-packaged rice mixes and I never use the entire spice pack with them because I feel like that is all you taste. Other than that this was a good, quick side dish.

Autumn Muffins

Great muffins! I also subbed apple sauce for butter and used dried dates and dried cranberries. I didn't realize I had forgot to add cranberries until I had filled all but the last one. Sprinkled a few on top to correct mistake and they look even better than the one with cranberries mixed in. Will definitely make again!

Sweet Blackberry and Brandy Sauce

Used this for pancakes and it was delicious. Used frozen blackberries since I didn't have fresh. I also did not taste the brandy (which was fine since it was for breakfast) but would add a little more if making for a dessert.

Grandma's Green Bean Casserole

Made this for Thanksgiving because I don't like the kind with mushroom soup but was asked to bring green bean casserole. Followed others' suggestions to sauté onions and lightly steam fresh green beans first. Also added 3 turns of cracked pepper and 3/4 tsp garlic. The only change I would make next time would be to add more green beans.

Thai Red Chicken Curry

I was excited to try this recipe, but it was very disappointing. The dish did not have much flavor and seemed very watered down, even after adding more curry paste. A friend told me that a good curry paste can make a big difference, so maybe that was the problem.

Apple Breakfast Bread

This was delicious! I followed some of the other reviews as well - used just half a stick of butter and 1/4 cup oil. Added 1/4 tsp nutmeg and ginger powder. I was going to add a third apple, but when I went to mix it in, there was plenty with just 2 apples as stated in the recipe.

Hot and Sour Chinese Eggplant

The sauce was very good and would work for any stir fry. My husband suggested adding orange zest and I will try that next time. I have two reasons for only giving this recipe 4 stars. 1 - the directions did not say to peel the eggplant and the skin was very tough and took away from the great taste of the eggplant. 2 - just using eggplant does not seem like enough of a main meal. I added chicken, red pepper, mushrooms, snow peas, and served over rice.

Kielbasa with Peppers and Potatoes

This dish is super easy and delicious. I usually add a little garlic and onion for additional flavor. Turkey kielbasa also works well if you want to make it a little healthier.
