Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

Reviewed: Jul. 26, 2015
Simple, healthy, and delicious! I didn't have red onion when I made this but otherwise did not make any changes.

Grilled Sausage with Potatoes and Green Beans

Reviewed: Jul. 12, 2015
Nice, easy, and quick meal that is great for the summer. I hate mushy, over cooked green beans, so I cut the potatoes into 1 inch pieces to be able to reduce the cooking time. I also used turkey kielbasa to be a little healthier.

Great Grilled Smoky Vegetables with Avocado and Goat Cheese Crumbles

Reviewed: Jul. 2, 2015
Delicious! The mixture of the marinade with balsamic vinegar, and goat cheese is perfect. Since I was making this as a main dish I borrowed another reviewer's suggestion and added canned tomatoes, pasta, and sausage to rhis dish (simmered tomatoes with sliced chicken sausage for about 20 minutes). I left out the avocado because of the pasta but didn't change anything else.

Fabulous Spinach Salad

Reviewed: May 19, 2015
This salad had no taste (the only change was adding chicken). The dressing needs to be more flavorful or other ingredients need to be added. Very disappointed.

Colleen's Slow Cooker Jambalaya

Reviewed: Mar. 24, 2015
This was very bland and overall I was not impressed. I might try this again to see if really good chorizo makes a difference (I used a brand name but it did not seem very greasy like other brands i have used). Maybe try cooking the celery and pepper for less time so they are still flavorful. I also thought it was very watery.

California Melt

Reviewed: Mar. 7, 2015
Very little flavor. Maybe this would be better with thick, bakery bread and fresh tomatoes from the garden but would still need spices or additional ingredients.

Asian Lettuce Wraps

Reviewed: Feb. 18, 2015
Loved this! Took ideas from other posts: Added raw shredded carrots for crunch and used soy crumble instead of beef just to be healthier. Only trouble was wrapping w/ the lettuce, which broke easily. I would recommend laying ingredients on top of two lettuce leaves and then just folding taco style as you eat it.

Vegetarian Bibimbap

Delicious!!! I would have preferred 2 eggs (my husband had 2 and wished he had 3) but that might be personal preference. Can't wait to make again!

Pecan Breaded Chicken Breasts

Reviewed: Jan. 13, 2015
This was was way too bland and the flavor of the pecans and chicken didn't meld together. Some reviewers noted that they added spices before the pecans but I don't know if that would even be enough to save it.

Thai Chicken Spring Rolls

Reviewed: Jan. 4, 2015
I have tried a few spring roll recipes and this is my favorite so far. I had to make a few adjustments since grocery store didn't have all ingredients: I subbed baby kale for watercress and I hate canned sprouts, so left them out (excited to make this in the spring when I can get them fresh though). Made my own peanut sauce using a simple recipe on this site. Put in a full cup of cilantro since I love it. Dipped rolls in sambal olek (chilli paste) since peanut sauce really stuck to the chicken. Next time I plan to add lemongrass to make them even better and will mix the chilli paste in with the chicken just to make it easier to eat.

Chicken Breasts with Lime Sauce

Reviewed: Dec. 29, 2014
This was delicious and easy. I don't usually like breaded chicken with lemon, so I was really making this for my husband, but I loved it as well. I sautéed the chicken in olive oil to cut down on fat. Served it with the "garlic quinoa" and "Mediterranean kale" from this website.

Chili Rellenos Casserole

Reviewed: Jul. 8, 2014
Flavor was good but it came out as a soupy mess. I noticed that some reviews said only 5 oz evap. Milk but some said the entire can of 12 oz so I was confused. I used the whole can and maybe that is why. I cooked it longer than suggested when I noticed that it wasn't firming up, but that didn't help. I did notice that when I pit the leftover away that it was a little better, so letting it rest might help.

The meat is very tender but overall this was way too bland. I might try again with lots of additional spices.

Delicious Black Bean Burritos

Reviewed: Jun. 12, 2014
Before I rolled up the burritos all I tasted was cream cheese with some heat from the pepper.. Added more beans, more cilantro, and cumin and chilli powder as others suggested but it still was not good. Baking the tortillas first also made them crunchy and they broke when rolling up.

Black Bean and Corn Salad II

Reviewed: May 26, 2014
Made without any changes and received many compliments at a Memorial Day cookout. Nice light side to go with all of the heavier food. I might try fresh corn cut from the cob next time to make it even better if I have more prep time to spare.

Pork and Shrimp Pancit

Reviewed: May 1, 2014
Good recipe but I thought it needed more of a "kick" so we added some chili garlic paste on our plates. Thought lemon grass would also work well. I don't know if those 2 ingredients would be used in Philippine cuisine, buying think they would make the dish even better. I was okay with the texture of the noodles but my husband thought they were too mushy. Next time we might try less soaking and more sautéing to get a crunchier or firmer texture. Still an enjoyable meal as is!
