Slow Cooker Chicken Pot Pie Stew

Reviewed: Jan. 10, 2012
With tweaks this recipe is "phenomenal" (to quote my husband). I used reduced fat and sodium soups....one cream of chicken and one cream of mushroom because that is what I had on hand. I used reduced sodium chicken broth instead of the bouillon and water. I used about 2 tsp minced garlic and 1 tsp celery seed. In addition, since some reviewers said it was bland, I added a package of Italian Dressing mix, and 1 tsp of poultry seasoning. Instead of the frozen vegetables I added a couple of handfuls of dry broccoli slaw (shredded broccoli, carrots and cabbage).

Grandmother's Buttermilk Cornbread

Reviewed: Dec. 30, 2011
The first time I made this recipe I followed the recipe exactly and it turned out great. It was moist with just the right amount of sweetness. Not too sweet. I have made this recipe several times since then. It is my go-to recipe for cornbread. We love it as written but our favorite way is with a can of jalapeños and a can of corn added. It also tastes great with lower fat ingredients such as light butter, low fat buttermilk or skim milk with lemon juice. This is one of our family favorites.

My DH and I love these mashed potatoes. If you like asiago cheese, then you will have to make these potatoes. It adds so much flavor to your everyday potatoes.

Cha Cha's White Chicken Chili

Reviewed: Jan. 8, 2012
This recipe was awesome especially when served with Grandmother's Buttermilk Cornbread from this site! Since I had some cooked leftover chicken I used that and threw everything in a crockpot on high for 2 hours and on low for about 3 hours. I used a vidalia onion, reduced sodium chicken broth and left out the cayenne since my leftover chicken was already spicy. However, I did add about a cup of mild salsa and jalapeño jack cheese. I will definitely be making this often.

Applesauce Pumpkin Bread

Reviewed: Feb. 17, 2013
This was very easy and very good. I followed the recipe, except that I did not have mace but instead used 1/4 teaspoon nutmeg and 1/4 teaspoon allspice. I added the optional chocolate chips but next time I would probably leave those out, just my personal preference. By all means give this recipe a try. The measurements and cooking time were spot on. Thanks Virginia Ann for sharing your recipe.

Pork Carnitas with Cilantro Tomatillo Sauce

Reviewed: Mar. 30, 2014
I am rating the pork only and not the tomatillo salsa. The pork tastes fantastic. To me the seasoning was just right. Be sure to let it simmer long enough for the flavors to meld together. I could not find decent tomatillos at the store so I just used a pico de gallo salsa. I will definitely make this again.

Black Magic Cake

Reviewed: Jan. 14, 2012
YUM!! I made this for my MIL's birthday and it was a hit. This chocolate cake was moist, rich, and full of deep chocolatey goodness. I followed the recipe except I used low fat buttermilk, only about 3/4 cup coffee and mixed the wet ingredients separately from the dry ingredients before adding them to the dry ingredients. Also, at the end I added probably a cup of semi sweet chocolate chips and frosted it with chocolate buttercream frosting. I baked it in a 9x13 pan for about 35 minutes and it came out perfectly. This will be my go to recipe for chocolate cake.

Black Bean and Feta Cheese Ugly Dip

Reviewed: Feb. 17, 2013
This tasted great. However, I thought this made too much dressing for the amount of the other ingredients. You could probably cut the amount of the dressing in half. Since I only had regular corn instead of Mexican corn, I added chopped red bell pepper and jalapeños to imitate the Mexican corn. The only thing is it is a very pretty dish. So I think the name does not apply. Proudly serve this dish for any occasion.

Lizzy's Creamy Chicken Bake

Reviewed: Jan. 26, 2012
5 Stars with tweaks. This is a great choice for an easy base recipe for a quick weeknight dinner. Since we like lots of flavor and spices I did tweak the recipe some to use what I had on hand instead of going to the store and to tweak it for our tastes. First since I didn't have seasoned salt, I sprinkled a little of each black pepper, garlic powder, paprika, and cayenne on the chicken before browning it. For the sauce I used a healthy request cream of mushroom soup instead of cream of chicken since I had it on hand. However, next time I would use cream of chicken soup because I thought the mushroom flavor was a little too strong. I used fat free sour cream and my hubby thought it tasted like a restaurant style full fat sauce. He didn't think it tasted like it had any low fat substitutions in it. Since I didn't want the sauce to taste solely like onion dip, I added a packege of dry zesty Italian Dressing seasoning mix and a splash of white wine. I served the chicken and sauce over pasta with roasted red, green, and yellow bell peppers. It was delicious. I will make this again.

Chicken with a Creamy Marsala Sauce

Reviewed: Feb. 16, 2013
This recipe had a nice mild flavor and the sauce was good over the chicken and the rice that I served with it. I followed the recipe, except used half and half instead of the heavy whipping cream. Next time (and there will be a next time) I will probably add some seasoned salt, extra pepper, and minced garlic. Thanks Stephanie for a really good recipe.

Sensei's Crusty Crumbled Blue Cheese Steak Topping

Reviewed: Jan. 5, 2013
I made this topping as written for two filet mignons wrapped in peppered bacon instead of ribeye steaks. It was outstanding! The blue cheese, horseradish, bread crumbs, and butter made an excellent combination of flavors with the bacon and steak. I will definitely make this recipe again. There is no need to spend outrageous sums of money going out for a steak dinner when you can make this dish for less and it will likely taste much better than the restaurant. Thanks for sharing Ski Mom.

Oven Fried Chicken Wings

Reviewed: Jan. 3, 2013
This was a very good and very easy recipe. Because we like lots of flavor, I increased the amounts of garlic powder, onion powder, and black pepper to about a 1/2 teaspoon each and added some dried minced onion to the bread crumbs. Also, I made my own seasoned bread crumbs by adding a couple of teaspoons of italian seasoning to plain panko bread crumbs. The panko bread crumbs make the chicken really crispy. Also, I place the chicken on a baking rack inside of a foil-lined baking sheet so that air can get below the chicken and keep it crisp on all sides, including the bottom. I also spray the chicken with cooking spray to help the chicken stay crisp.

Savory Garlic Marinated Steaks

Reviewed: Feb. 12, 2012
This was very good. I marinated it overnight and followed the recipe with the exception of the soy sauce since I was out. I tried hoisin sauce since I had that on hand and it turned out great. I will try this again with the soy sauce.

Double Chocolate Cranberry Oat Cookies

Reviewed: Dec. 20, 2011
Yum!!! This delicious oatmeal, chocolate chip, toasted coconut and pecan cookie recipe is a winner. The toasted coconuts and pecans give it a wonderful nutty flavor. I followed the recipe with a couple of suggestions by reviewers. First, since I used sweetened coconut, semi sweet chocolate chips, and added toffee chips, I reduced the brown sugar to 1 cup and white sugar to 1/4. It was still plenty sweet. Also, since I added the toffee chips I reduced the chocolate chips to 1 cup and there was still lots of chocolatey flavor. Lastly, I checked the cookies after 8 or 9 minutes and they were done. They were, as another reviewer described, crispy on the outside and slightly chewy on the inside. Also, it made probably more like 48 cookies for me instead of 36. My family loved these cookies and specifically requested them for Thanksgiving. I highly recommend this recipe.

Asian Lettuce Wraps

Reviewed: Dec. 12, 2011
This has a fantastic flavor. I have made it twice now, once with ground beef and once with ground chicken and prefer the ground chicken in this recipe. In no way is this bland. I like bold, spicy food and added extra garlic chili sauce to spice it up and offset the sweetness of the hoisin sauce. I made the recipe as written except used 1/2 tsp ground ginger instead of pickled and increased the chili garlic sauce to about 3 TBL and added shredded carrots and broccoli slaw to increase the vegetables in the dish. This would also make a great filling for egg rolls. Thanks for a great recipe.

Chicken Jalfrezi

Reviewed: Nov. 11, 2012
This tasted awesome and was so easy! I was a little nervous after reading some of the reviews where people did not like turmeric. I didn't know if I liked it or not but I forged ahead and tried the recipe and I'm so glad a did. I followed the recipe except I left out the ghee and cilantro. I served it with quinoa and topped it with chopped green onions. I will definitely make this again.
