South Texas Carne Guisada

Yum! This is Tex Mex at its best! If you like fajitas you will LOVE this dish. The flavors are great. I did take the recommended short cut and used canned diced tomatoes and green chilies. It still tasted awesome. Also, I used red, orange, and yellow bell peppers just to make it more colorful. I served it with sour cream, cheese, and pico de gallo. The spices are just right. This will be my go to recipe from now on.

Roasted Asparagus with Balsamic Vinegar

Savory Garlic Marinated Steaks

This was very good. I marinated it overnight and followed the recipe with the exception of the soy sauce since I was out. I tried hoisin sauce since I had that on hand and it turned out great. I will try this again with the soy sauce.

Bada Bing Bada Banged Potatoes

My husband and I really liked these for a change of pace. I followed the recipe with the exception of drizzling the olive oil, herb, cheese mixture over the potatoes instead of coating the potatoes in the mixture. I will make these again.

Fiber One® Chocolate-Peanut Butter Haystacks

We thought these little chocolately crunchy treats were really good and couldn't be easier to make. After reading the reviews before making the recipe I was concerned about the texture. Therefore, I made half a batch and used all natural peanut butter and semi sweet chocolate chips. My family and I thought they were very good, crunchy and chocolatey. We may be more used to eating lower fat, higher fiber foods than some people as I have gradually been trying to add more of these types of foods into our diet. I recommend giving these a try as a crunchy chocolately peanut butter treat.

Thai Style Chicken Pasta

This was very good with a few slight modifications to ingredient amounts. I was looking for a recipe to use what I had on hand and this recipe fit the bill for most of the ingredients. First, as I didn't have dried red chili peppers, I used about 1/2 tsp of crushed red pepper. As I like a medium spice level I could have used more crushed red pepper. I also used ground ginger instead of fresh since I didn't have any fresh. Lastly I tripled the amounts of the soy sauce, lemon juice, and white wine and probably should have increased it more. I served it with diced red, yellow, and green bell peppers and whole wheat shell pasta. Next time I want to try it with the dried red chili peppers and the fresh ginger as I think that would make it better. However, 1/2 tsp grated FRESH ginger is a very small amount. Next time I would probably triple that amount as well and quadruple the amounts of the soy sauce, lemon juice, and white wine.

Lizzy's Creamy Chicken Bake

5 Stars with tweaks. This is a great choice for an easy base recipe for a quick weeknight dinner. Since we like lots of flavor and spices I did tweak the recipe some to use what I had on hand instead of going to the store and to tweak it for our tastes. First since I didn't have seasoned salt, I sprinkled a little of each black pepper, garlic powder, paprika, and cayenne on the chicken before browning it. For the sauce I used a healthy request cream of mushroom soup instead of cream of chicken since I had it on hand. However, next time I would use cream of chicken soup because I thought the mushroom flavor was a little too strong. I used fat free sour cream and my hubby thought it tasted like a restaurant style full fat sauce. He didn't think it tasted like it had any low fat substitutions in it. Since I didn't want the sauce to taste solely like onion dip, I added a packege of dry zesty Italian Dressing seasoning mix and a splash of white wine. I served the chicken and sauce over pasta with roasted red, green, and yellow bell peppers. It was delicious. I will make this again.

Turkey and Quinoa Meatloaf

This was very good meatloaf. The texture was perfect and it was nicely spiced. I followed the recipe with the exception of subbing ketchup for the tomato paste (because I didn't want to open a can of tomato paste for only 1 TBL) and I used Montreal Steak Seasoning instead of salt and pepper. As we like spicy bold flavors next time I will probably follow other reviewers recommendations to add bbq sauce to give it a little bolder flavor.

White Chili V

This chili was good. I scaled it down to 3 servings and while preparing it, I accidentally grabbed the beef broth instead of chicken broth so it was not quite a white chili in appearance. However, it tasted good with a nice level of spiciness and combination of spice. I will make it again (using the chicken broth next time!)

CopyCat Starbucks Classic Coffee Cake

Wow! This is an over the top recipe. It is awesome! My husband loved it so much he requested that I make this cake for his birthday. The cake was moist and the topping was outstanding. Both my hubby and I thought it was much better than Starbucks. Thanks for sharing this fantastic recipe.

Gringo Posole

We thought this posole tasted great. I sprinkled the pork with black and red pepper before browning. I then sautéed the onion and garlic only and then threw everything (except the red and green peppers) in the slow cooker at the same time and cooked on high for about 4 hours. Since we like a medium level of spiciness I cut the red pepper to a 1/2 tsp. Then during the last hour of cooking I added the red and green bell pepper so they would not get mushy and would retain more color. It was very flavorful and just the right level of spiciness for us. We will definitely be making this again. Thanks Lisa for a great recipe!

Black Magic Cake

YUM!! I made this for my MIL's birthday and it was a hit. This chocolate cake was moist, rich, and full of deep chocolatey goodness. I followed the recipe except I used low fat buttermilk, only about 3/4 cup coffee and mixed the wet ingredients separately from the dry ingredients before adding them to the dry ingredients. Also, at the end I added probably a cup of semi sweet chocolate chips and frosted it with chocolate buttercream frosting. I baked it in a 9x13 pan for about 35 minutes and it came out perfectly. This will be my go to recipe for chocolate cake.

Slow Cooker Chicken Pot Pie Stew

With tweaks this recipe is "phenomenal" (to quote my husband). I used reduced fat and sodium soups....one cream of chicken and one cream of mushroom because that is what I had on hand. I used reduced sodium chicken broth instead of the bouillon and water. I used about 2 tsp minced garlic and 1 tsp celery seed. In addition, since some reviewers said it was bland, I added a package of Italian Dressing mix, and 1 tsp of poultry seasoning. Instead of the frozen vegetables I added a couple of handfuls of dry broccoli slaw (shredded broccoli, carrots and cabbage).

Halibut with Tomato-Basil Sauce

We had mixed reviews on this recipe at our house. I liked it. I thought it was good but hubby thought it was just ok. I think it was the olives. Next time I will try it without the olives and see if he changes his mind about it.

Cha Cha's White Chicken Chili

This recipe was awesome especially when served with Grandmother's Buttermilk Cornbread from this site! Since I had some cooked leftover chicken I used that and threw everything in a crockpot on high for 2 hours and on low for about 3 hours. I used a vidalia onion, reduced sodium chicken broth and left out the cayenne since my leftover chicken was already spicy. However, I did add about a cup of mild salsa and jalapeño jack cheese. I will definitely be making this often.

Buffalo Chicken Burgers with Blue Cheese Dressing

I seem to be in the minority. I thought it was ok at best. My husband did not care much for this burger even though we like wings. I was looking forward to it and made it as written but the burger did not seem to have much flavor other than the hot sauce.

Slow Cooker Pot Roast

When I came home after work my hubby declared this roast was "da bomb!" I made this on a day when I didn't have time to cook or plan. So I needed something super simple to quickly throw in the crockpot. Like others, I was skeptical about all the packaged seasonings. Usually I try to make my own instead of using the prepackaged stuff but I simply did not have time nor motivation to do so on this day. I did not add salt since the packaged seasoning would have plenty. Also, I used a reduced sodium gravy mix and added probably 3/4th cup water but next time will probably stick to 1/2 cup because it made way more gravy than we needed. However, this was delicious and I am so glad I found this recipe.

Grandmother's Buttermilk Cornbread

The first time I made this recipe I followed the recipe exactly and it turned out great. It was moist with just the right amount of sweetness. Not too sweet. I have made this recipe several times since then. It is my go-to recipe for cornbread. We love it as written but our favorite way is with a can of jalapeños and a can of corn added. It also tastes great with lower fat ingredients such as light butter, low fat buttermilk or skim milk with lemon juice. This is one of our family favorites.
