Eggnog Pancakes

Reviewed: Dec. 16, 2012
I liked the idea of this for a Christmas breakfast. It tasted good. However, the pancakes were very heavy. A little bit goes a long way. I followed the recipe, except added an additional teaspoon of baking powder per another reviewer's recommendation. It is nice for an occasional change of pace. Thanks for sharing.

Chicken Ranch Dijon

Reviewed: Nov. 18, 2012
Loved this dish! My husband said this dish tasted great and I could make it anytime. I did tweak it a little since we like bold flavors, I added blackened seasoning to the chicken instead of just salt and pepper. Also I used light ranch dressing. I didn't measure and estimated the amounts of dijon, ranch dressing and white wine in the sauce. I probably added a little more white wine and a little less dijon. After tasting the sauce it was really tangy so I added about a tablespoon of sugar to offset that and it was perfect. This is such a wonderfully delicious and easy recipe. We will be making it again. Thanks for sharing.

Bar Chicks - Blackened Chicken Sliders

Reviewed: Nov. 18, 2012
Delicious chicken sliders! Messy but yummy! They had a great flavor although, not for the faint of heart when it comes to spice. One cup of white wine would have been plenty for the marinade. I only marinaded about 4 hours and it was still delicious. I'm sure it would be even better if it marinated overnight. The blackened seasoning was salty and spicy. I like a medium level of spiciness and next time I would cut cayenne in half as well as the salt. I served these on small onion rolls with arugula and sliced tomatoes.

Quinoa and Black Beans

Reviewed: Nov. 13, 2012
This had a good flavor but was not great. However, it is very healthy. I will probably try it again but add some additional spice to it.

Pumpkin Bread I

Reviewed: Nov. 11, 2012
This was excellent. I followed the base recipe but tweaked it by increasing the pumpkin pie spice to 4 teaspoons and added cinnamon chips instead of walnuts. I added a glaze made of confectioners sugar, milk, and vanilla. Delicious.

Authentic Pad Thai

Reviewed: Nov. 11, 2012
I was a little nervous while making the recipe because it did not seem like it would taste like the pad thai I loved at a local restaurant. Those fears were set aside once I tasted it because it was delicious. The only thing I would do differently next time is maybe add a little crushed red pepper or cayenne.

Chicken Jalfrezi

Reviewed: Nov. 11, 2012
This tasted awesome and was so easy! I was a little nervous after reading some of the reviews where people did not like turmeric. I didn't know if I liked it or not but I forged ahead and tried the recipe and I'm so glad a did. I followed the recipe except I left out the ghee and cilantro. I served it with quinoa and topped it with chopped green onions. I will definitely make this again.

Roasted Brussels Sprouts

Reviewed: Nov. 4, 2012
I read reviews and only cooked them a little over 15 minutes based on reviews. Normally we would not eat brussels sprouts because we don't like them. However, several friends said to prepare them this way and we would like them. Well, we tried them and still don't like them. Roasting them made them edible, which was better than other methods but we would not make this again.

Campbell's® Green Bean Casserole

Reviewed: Nov. 4, 2012
I made the recipe as written. Next time I might leave out the soy sauce. It is really good with fresh green beans and the french onions. It is your traditional Thanksgiving green bean casserole.

Swanson® Ultra Creamy Mashed Potatoes

Reviewed: Nov. 4, 2012
This is a good solid recipe. I like using yukon gold potatoes for mashed potatoes because they are so buttery. I quartered the potatoes so they took longer to boil, about 20 minutes. What size you cut the potatoes is important because the time required will need to be adjusted. Keep this in mind when trying to time everything for a holiday dinner. The potatoes were very good. Like others mentioned, the broth makes the potatoes a little more yellow or gold than white. I used milk instead of cream and it still tasted great.

Moist and Savory Stuffing

Reviewed: Nov. 4, 2012
This recipe is a good base recipe to use as a starting point and time saver. However, I like to add additional celery and onions as well as sage, poultry seasoning, black pepper and parsley.

Firefighter's Favorite Chocolate Chip Cookie

Reviewed: Oct. 31, 2012
This was just OK for us. I made these cookies as written and they came out flat. Next time I would refrigerate the dough for about 30 minutes before baking. Also, I agree with another reviewer that I would recommend cutting back on the baking soda. Not sure if I will make these again as there are many other excellent cookie recipes on this site.

Donut Muffins

Reviewed: Oct. 27, 2012
OMG! These little muffins are addictive! I have seen reviews and comments on the buzz about these donut muffins and I finally got around to trying them. They are so little and cute that it is easy to pop four in your mouth before even thinking about it. I can't make these often but for a special treat, these are great.

Ultimate Steak Sandwich

Reviewed: Oct. 16, 2012
Yum! This was delicious. My husband loved it. I sprinkled the steak with seasoned salt, black pepper, and granulated garlic and left out the liquid smoke. I probably used triple the amount of worcestershire. I also added sautéed red and green bell peppers in addition to the onions.

Greek-Cajun-Tex Shrimp

Reviewed: Oct. 11, 2012
This cajun / texas interpretation of greek shrimp tastes awesome. The sauce has lots of flavor and is great on crusty bread. It is also very quick and easy to make. You can have dinner on the table in about 20 minutes. It was so good we had it for dinner a few days later on a weeknight. I served the shrimp over pasta and my husband made shrimp tacos with it. It is now one of our favorite dinners.
