Amazing Muffin Cups

This were tasty. Be sure to cook the potatoes long enough until they are crisp so they will slide out of the pan. Otherwise, they may stick to the pan, even after spraying with cooking spray.

Pork Carnitas with Cilantro Tomatillo Sauce

I am rating the pork only and not the tomatillo salsa. The pork tastes fantastic. To me the seasoning was just right. Be sure to let it simmer long enough for the flavors to meld together. I could not find decent tomatillos at the store so I just used a pico de gallo salsa. I will definitely make this again.

RITZ Fried Ravioli

I came up with this recipe for Ritz using refrigerated ravioli. They were so quick and easy to make and so yummy! I had to go back and make another batch because they went so fast!

These are quick and easy to make! The homemade russian dressing is delicious with the pastrami and corned beef. It is easy to assemble. I prefer it opened faced because it is easier to eat.

"Pantry Raid" Chicken Enchilada Casserole

This was awesome. I would give it 10 stars if I could. For me this is pure comfort food; and it is so easy. I cheated and used shredded rotisserie chicken, light cream cheese and substituted my customized Grandmother's Buttermilk Cornbread recipe with corn and jalapeños from this site instead of the cornbread mix. So it was a super fast dinner. Thanks for sharing a great recipe.

Greek-Seasoned T-Bone Steaks with Cucumber and Tomato Salad

We LOVED this recipe. I made my own greek seasoning and mixed that in about 2 tablespoons of olive oil and brushed on the steaks before grilling. We used a porterhouse and it turned out delicious. Since I was out of feta cheese, I used blue cheese instead. Thanks for an excellent recipe.

Sizzling Steak Fajitas

These fajitas have excellent flavor without a lot of heat. So I think everyone would like them. I marinated the fajitas overnight and I think marinating them that long helped bring out all the flavor. Those who like a lot of heat, can add the pico de gallo, jalapeños, etc. For those that do not like a lot of heat, leave off the pico de gallo and add the toppings of your choice. I really like that Goya Mojo Criollo marinade. I did not find the Sazonador. So I added garlic powder, onion powder, cumin, black pepper, and mexican oregano instead. I seasoned the meat first with the marinade. Then I cooked the meat first, removed the meat, added the vegetables to let them cook and get the flavor of the meat. Then added the meat back at the end. However, next time I would grill the meat instead.

Oven Roasted Parmesan Potatoes

bellepepper, you have an easy recipe that is simply delicious and fits into a healthy eating plan as well. So I thank you for that. I used russet potatoes since that is what I had on hand and cooking spray instead of oil. They turned out just like your picture and like you described, crispy on the outside and tender in the middle. The potatoes went really well with Marianne's Pork Medallions with Balsamic Vinegar and Capers recipe as well as the Spiced Marinated Tomatoes recipe from Cooking Light's June 2006 magazine. This has become my go to recipe for roasted potatoes.

Antipasto Pasta Salad

This is an excellent pasta salad. I agree with other reviewers that this is best served the next day. The asiago cheese with the balsamic vinegar, salami, and olives make an excellent flavor combination. Don't skip the asiago! That unique bold flavor really makes this recipe stand out. I followed the recipe using the shell pasta and cherry tomatoes along with roasted red bell peppers and kept everything else as written, except for using extra parmesan. Next time I think I would add extra asiago cheese.

HERDEZ® Turkey and Zucchini Enchiladas with Tomatillo Verde Sauce

My husband and I loved this recipe. I made it the night before and we had it for dinner the next evening. The flavors really melded together well. My husband said this was a keeper. I agree. The only change I made was to make it with chicken instead of turkey and I sprinkled a little homemade taco seasoning on the chicken.

HERDEZ® Creamy Tomatillo Avocado Salsa

Wow. This is definitely a 5-star dish! I now know what I will bring to parties from now on. This dip was excellent and so easy to make! I started out with 1/2 a bottle of the Herdez tomatilla Verde sauce and kept it that way because it was perfect for us. The only problem was I have to stop myself from eating all of it. Thanks Valerie for a fantastic dip.
