Creamy Chocolate Mousse Pie

Just added a little confectioner's sugar to the whipped cream. My friend said it was the best chocolate mousse pie she'd ever had and it's her favorite kind of pie! Thanks for the easy, delicious recipe!

Insanely Easy Vegetarian Chili

This chili is definitely easy, healthy, and flavorful. We enjoy it in my house. However, it lacks the complexity of flavor that would make it 5 stars. It's a great basic recipe that you can adjust to fit your taste.

Chef John's Ham and Potato Soup

This soup is delicious! For such inexpensive ingredients it fools you into thinking you are eating an expensive restaurant soup! I double the amount of carrots and celery to make it more nutritious and you can sub half and half or milk for the cream. SO good!

Extreme Chocolate Cake

I was worried about how this cake would turn out because it took much longer to bake than the recipe states. (Anyone else have that problem? Maybe because the batter cooled between the time I added the boiling water and the time I put it in the oven.) However, it was delicious! The cake stayed moist and soft and the frosting was fabulous! Everyone at my daughter's birthday Party enjoyed it. SO Chocolatey! Just the way I like it! I did have a little trouble getting one of the cakes out of the pan (the cake broke in half but no one will know if you stick it back together and frost over it) so next time I will be sure to add parchment paper or something. Overall, LOVED this cake and will definitely make it again!

Chipotle Chicken Salad

I use this as a base and add things to it based on what I have on hand. I made a very good variation with cilantro, cherry tomatoes and cucumbers. YUM! Try changing it up a little and see what you can make.

Curried Coconut Chicken

This is now a regular at our house. I love that it adds different flavors to our menu. I like to add a jalapeno for some heat but otherwise I cook it exactly as written. (I did add diced tomatoes from our garden once instead of the canned tomatoes and it was just as good.) I serve it with rice. Everyone loves it including my picky toddler and husband!

Spicy Chicken Thai Soup

I used about 6 drops lemongrass CPTG essential oil (safe for cooking) instead of the lemongrass stalks. It was good. I love that the flavors were so different from what I'm used to. However, it doesnt smell very good, especially the leftovers. Maybe because of the fish sauce?

Easy Texas Chili

4.5 stars. Very good but not quite amazing. I used diced tomatoes from my garden instead of the canned. I also used 2.5 lbs ground turkey instead of the beef and fresh garlic. Everything else was pretty much as written. USE A VERY LARGE POT. My largest pot is only about 5 qts and I had to transfer some of the chili to another pan because it was overflowing. The leftovers are still simmering on my stove and I will freeze them for later meals (Way cheaper, healthier, and better tasting than canned chili!). Ideas for additions to make it amazing: celery, corn, bacon, cumin, cocoa powder, cinnamon.

Thai Chicken with Basil Stir Fry

Too salty! Like some of the other reviewers said, the saltiness drowns out the flavor of the coconut and the vegetables. All I could taste was chicken, basil, and salt. I will not be making this again.

Pumpkin Chocolate Chip Cookies III

These were delicious! Soft and moist, but still held together well. (You know, they don't break into pieces when you try to pick them up.) I do recommend dropping them onto the sheet by the SMALL spoonful. But either way you get good cookies! Oh and I also baked them at 365 and it was more than 12 minutes... maybe 14 or 15 minutes. Still delicious!

Salsa Chicken Rice Casserole

I only made 2 changes. I used brown rice instead of white (gotta love whole grain), and I used all cheddar cheese cause it's all I had. It wasn't very flavorful and my husband wouldn't even touch the leftovers. This recipe is a good base but it definitely needs some added spice and flavor to make it great.

Fresh Tomato Zucchini Soup

Really 4 1/2 stars but I rounded up. It was a delicious way to use my garden vegetables! My husband also enjoyed it. I will make it again. I did the following: -Added a can of great northern beans when I pureed the soup to add some fiber and protein. Next time I will make it kidney beans to try and preserve the deep red color of the soup. -added chili powder and red pepper flakes instead of the chili because It was what I had on hand. -used 10 medium tomatoes instead of 8 large. -used chicken broth instead of vegetable. -added extra garlic and left out the tarragon and dill because I didn't have any. -I served it with cheese, garlic toast, and sour cream (a must!) I froze the leftovers (there weren't many) in single serve portions to heat up in the microwave and eat during cooler weather.

Zucchini Bisque

Quite good but not amazing. A tasty and quick way to use some of the garden zucchini. I will make it again. I used one garden zucchini about a foot and a half long, but I probably could have used more zucchini. Next time I will add some pressed garlic in with the onion like was recommended because I ended up adding garlic powder in the end anyway. I added the following ingredients: -about 1/2 tsp each oregano and garlic powder and about 1/8 tsp of red pepper flakes with the spices. -a can of drained garbanzo beans and a little water with the zucchini and pureed it along with everything else. I did this to add some protein and a little more fiber to the soup. -I also used 2 percent milk instead of the cream. -I served it with some chopped leftover lemon chicken and sour cream. I plan on freezing the leftovers in single serve portions to heat up in the microwave and eat during the winter and after my baby is born. Yes, I will make this again.

Slammin' Salmon

I give this recipe 4 instead of 5 stars because I didn't love it until I added lime juice on top of my cooked salmon. I actually baked mine so that may have made a difference. But let me tell you, once I added the lime juice, I thought I was in heaven! Best fish I've ever eaten!

Butternut Squash Soup II

Delicious and easy! I love that I had all the ingredients on hand. I followed the advice of those who said to cook the squash beforehand, add garlic, and only puree half of it to leave it a little chunky. I also included some parsley, seasoned salt, cinnamon (surprisingly really good!), and cooked chicken to make it a complete meal. Turned out great and my husband asked me to make it again!
