Southwestern Vegetarian Pasta

Sweetly Stewed Rhubarb

So yummy! I just made this and I followed the advice of others to start low on the sugar, taste and adjust. (Of course it tasted so good I was doing more tasting and less adjusting...)I like my rhurarb pretty tangy, and I had added a handful of strawberries, so I only used 1 cup of sugar. I also found that it required way to much water. I had to let my cook for 90 minutes so that it wasn't soupy and was nice and thick.

Jamaican Burgers

these were tasty. to weigh in on the egg/ no egg debate, i made a patty without an egg and it stayed together ok, but, since i'm not a vegan, i thought i would add two eggs to make it stick together better. the patty with the eggs stayed together 1000 times better.

Super yummy-- I just finished making it and am already planning what to add next time. I used cranberries but I think dried apples and raisins would be tasty. Makes tonnes though-- I halved it and still have plenty

Mexican Bean Burgers

these are some of the best veggie burgers i have ever made. i used my hand blender on the beans and carrots and that made everything nice and sticky. i followed the recipe pretty well, but i used red pepper and i threw in some mini portobello mushrooms and i fried the onions, pepper and mushrooms before adding it to the rest of the mixture. delicious!

Sweet Pepper Pasta Toss with Kale

this was quite yummy. i followed the recommendations and used 4 cups of kale, worcestshire sauce, olives and capers. since my csa box came with zucchini and garlic scapes i added those as well. i also used 1/3 cup of the cooking water for the pasta to make it a little more moist.

Vegan Red Lentil Soup

this soup is fantastic! i upped the cayenne pepper and garlic and used stock instead of water, but other than that i left the recipe as is. delicious! i gave the recipe to my mother and now all her friends want it too.

Apple, Beet and Avocado Salad

I thought this was delicious. I added goat cheese which was a great complement to the sweetness of the beets and the apples. I also realized at the very last second that I used up all the apple cider and apple juice in the house... so I had to substitute 3/4 cup water with 1/2 tsp of sugar. It was still delicious but I think it would be better with the cider.

Yum-- but very strong. I used half the whiskey (Jamiesons) and it was still potent, but ridiculously yummy. I made a large amount and gave it away as Christmas presents.

Cinnamon Raisin Bread I

just came out of the oven, and i couldn't wait for it to cool. delicious! *update* i just made this again, but this time i wanted a chewier bread so i used half whole wheat flour and i added an extra 1/3 cup of milk, and then i let it rise overnight in the fridge. the whole wheat takes a bit longer to rise-- i think an extra 10 minutes or so for the second rise after i rolled it out. also i used 1 cup of raisins and one granny smith apple-- i think this version is even better than the original!

Rhubarb Blueberry Muffins

these were super tasty-- however i made the mistake of making them with lowfat sour cream. do not try that! they do not stay together. next time i will definitely use regular sour cream. i followed the others recommendations and increased the baking powder and added a cinnamon/ brown sugar topping. i also lightly floured the blueberries to keep them from sinking to the bottom. i think some lemon zest and a bit of lemon juice would take them from good to excellent.
