Big Soft Ginger Cookies

I made these cookies for a cookie exchange. I doubled the recipe and it made over and beyond what I needed (which was a good thing since my family devoured them). I followed the recipe exactly and rolled the dough into walnut sized pieces while flattening them out just a bit. They were nice and soft and tasted fabulous. Definitely an A+ recipe!

Baked Tofu Bites

I followed the recipe except for the liquid smoke (I did not have any). I also made sure to really press all the liquid out of the tofu. Lastly, just make sure to keep an eye on the tofu once it is in the oven. Some of my pieces started to get a little "too crispy". I really enjoyed this recipe as did two of my three daughters (and believe me, they are pretty picky eaters). We snacked on them and finished them off within minutes. Next time I'll need to make a double batch!

Best Chicken Salad Ever I

This really was one of the best chicken salads I have ever made. I used leftover roasted chicken instead of the canned. All in all it was DELICIOUS! Definitely a keeper!

Baked Ziti III

My family and I also thought this was very good. I took another's suggestion and used the Bertolli's Tomato Basil Spaghetti Sauce. I used a 9x13 baking dish and it JUST made it. Like so many others have suggested, you might want to use two baking dishes as this recipe makes A LOT of ziti.

Chocolate Chip Cheese Ball

I have to say that I LOVE this recipe. I have made this recipe many times and I always get great comments on it. I would make sure to use butter as I think that may be the reason why some say it doesn't hold together well. I also let mine sit in the fridge overnight. I have served mine with chocolate graham crackers, regular graham crackers, vanilla wafers, chocolate wafers,and pretzels. Another suggestion a friend gave to me (although I haven't tried it yet) is right before serving also roll it in crushed up toffee.

Strawberry Cake Cookies

I'm sorry, but these were not that good. I followed the directions to a tee, but they never seemed to firm up (even after cooking them for much longer than the time suggested). I realize they are a "cake" type cookie, but these turned out more like a goo type cookie. And the taste was really nothing to rave about.

Microwave Oven Peanut Brittle

Good recipe and very quick and easy to make. For some reason (even after adjusting the time and type of peanut) it still tasted slightly burnt(a bit of a burnt aftertaste). I did make sure the peanuts didn't turn brown and I used 7% power (I have a mega watt microwave). Even after 3 batches, it still tasted a bit burnt. I may try this recipe one more time.

Microwave Peanut Brittle

Good recipe. Quick and easy. It seemed to be missing something though. I decided to add a pinch of salt and that seemed to do the trick. I also have a mega watt microwave oven, so I followed the directions, but I used 8% power. I would make this again.

Chocolate Trifle

Wow!!! What a fantastic recipe!!! I made this for a Christmas party and this got eaten before all the other desserts were practically touched. The only things I did differently were I used a 1/2 pint of whipping cream in place of the cool whip in the chocolate layer. I also added strawberries and crushed Skore bars between the cool whip layers. It was not too sweet at all. SOOOO GOOD. I have been requested to make this every year from now on.

Bagel and Cheese Bake

I made this recipe for a brunch with my Moms group and it was a big hit (even the kids liked it!) The only things I did differently were I ended up using a smaller pan (which meant thicker layers, so I had to cook it a little longer 45min.), and I covered the casserole during the first 15/20 minutes. Then I uncovered it for the remaining baking time. The top layer didn't get burned or wasn't tough and everything cooked through nicely. Lastly, I used turkey bacon instead of regular bacon. This recipe is a keeper and I will definitely be making this dish again!!!
