Chicken Enchiladas I

This was amazing!! I eliminated teh watter and added montery and co-jack cheeses as well. I also sprinkled 1 tbsp melted butter over teh enchiladas before cooking, and added some salsa to the taco sauce. Next time I will sautee the onions and gp first in some olive oil - they were a bit overpowering for my taste. But otherwise a super super recipe - try it!

Chicken Scampi II

Great recipe, soooooo easy. I did change it quite a bit though (it was waaaaay too fatty). I cut teh butter down to 1/4 c margarine instead and elminated all but a sprinkling of olive oil. I used 1 c garlic chicken stock - 1/2 cup in the pan with the chicken and 1/2 after I used it to steam some broccolli. I didnt' have any basil so I used 1/2 tbsp italian seasoning and eliminated the 1/4 tsp oregano. I also used 2 chicken breasts instead and added 1/2 bag frozen broccoli that had been steamed in garlic chicken stock. I served over fetuccini noodles. THis was really super and would taste great with shrimp or whiting fillets!

Quick and Easy Tuna Casserole

Awesome, we'll never buy tuna helper again!! :) I adjusted the recipe as follows to make less and account for our tastes: 1/2 package noodles, 1/2 can peas, 1 can cream of cheddar soup, 1 can tuna, 1/2 onion chopped and sauteed in olive oil first, 5 slices american cheese. I also heated the soup, cheese, and tuna in the microwave before I added it to the cooked noodles in order to have it mix well, which it did fantastically! This made plenty for four. You could use any cream soup,and brocolli would be a really good vegetable too. Even my 2 year old ate this! Be sure to sautee the onions before adding them if you don't want them crunchy!

Scalloped Corn and Broccoli

Very easy and very good!! A nice dish that is a little sweet. I followed the directions exactly and it turned out great. Would be really good with ham, chicken, or turkey.

Apple Pie I

This turned out super!! :) What a fantastic pie. It's a keeper! I did add a few tbsps of flour to the cinnamon sugar mixture so it would "jell" and it turned out perfectly, not runny in the least!

Chicken Creole

Chicken Noodle Casserole II

Great!!! It's a keeper. I only had co-jack block cheese so I sliced that up and used it. Also, I had no paprika or chili powder. I used a generous dash of oregano, cumin, and cheyenne pepper to substitute for the chili powder and just left the paprika out - AND IT STILL TASTED AMAZING! We also substituted a can of mixed vegetables instead of the peas and carrots. Very easy and my 2 year old son loved it.

Green Bean Okazu

This was awesome! My husband loved it and suggested it had a beef jerky kind of taste. My 2 year old gobbled it down. Defintely suggest trying it with fresh beans, they made the dish!
